Blueberry Salad with Northern Beans and Corn

I shared the story of this dish a little on my weight-loss blog — click here. Basically it was my answer to a crappy morning. I’ve really gotten good at medicating my mood by getting creative in the kitchen and blasting angry music.

I know. I’m weird.

Anyway, this salad came out AMAZING!  I’m starting to realize that happens a lot when you simply put fresh, in season, yummy ingredients together which is basically all I did.

Blueberry Salad with Northern Beans and CornIt may sound like a weird combo, but the sweet blueberry with the creamy bean and the crisp corn was simply perfect. All I did was add a simple dressing to bring them all together. Oh! And the mint… the mint made it so fresh and summery!

Here’s what I did…

  • 2 tbsp apple cider vinegar
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1/4 tsp kosher salt
  • 1 pint fresh blueberries
  • 1 can great northern beans, drained and rinsed
  • Corn from 2 ears (~1 cup canned corn would work, too)
  • Small handful of fresh mint leaves (~2g)

Put the vinegars, oil, honey, and salt in a large bowl and whisk.

Add the remaining ingredients.

Toss.

That it!

It made 3 servings just about 1 and 1/4 cups each.

(I added a bit more mint to make the photo pretty.)

I ate another serving today and have one more in the fridge for tomorrow!

I’d love to hear your story or thoughts on mine.

However, to prevent the massive amounts of spam I was receiving I have turned off comments on any post older than 5 days old. If you'd like to leave me a note regarding this post or anything really try me on twitter (@RoniNoone,) my Facebook page, or even IG (@RoniNoone) I'm so sorry for the inconvenience. I never thought I'd have to do this but it's gotten way out of hand and comment management has become simply too time consuming to manage.
