Six years ago — insert Holy Crap I’m old and I’ve been blogging far too long joke here — I shared my favorite way to turn a hard boiled egg into a quick sandwich. It’s something I still make pretty regularly but this morning I decided to step it up a little by adding avocado, spinach and bacon.
The result was fan- (I really want to curse) -tabulous!
So simple, so tasty and it took literally minutes to pull together.
Here’s what I did…
- 1 whole wheat English muffin
- 1/4 of an avocado
- Handful of raw spinach
- 1 slice of cooked bacon, cut in half
- 1 hard boiled egg, sliced — Click here to see how I make mine.
- Salt and pepper
Toast the English muffin. While it’s toasting, cut the avocado. I make two slices and remove a quarter of it, leaving the rest intact, seed and all. Then I store it in a zip-lock bag with the air sucked out.
Peel off the avocado skin and smear on the bottom of the toasted English muffin.
Top with the spinach and bacon.
Lay the egg slices on top and sprinkle with salt and pepper.
According to Nutrition Data, this sandwich is a good source of protein, vitamin A, folate, phosphorus and selenium, and a very good source of vitamin K and manganese. It’s also super filling with its fat, fiber and protein content.
I think I found my new favorite breakfast!
