A Better Egg Muffin Sandwich

Six years ago — insert Holy Crap I’m old and I’ve been blogging far too long joke here — I shared my favorite way to turn a hard boiled egg into a quick sandwich. It’s something I still make pretty regularly but this morning I decided to step it up a little by adding avocado, spinach and bacon.

So simple, so tasty and it took literally minutes to pull together.

Here’s what I did…

Toast the English muffin. While it’s toasting, cut the avocado. I make two slices and remove a quarter of it, leaving the rest intact, seed and all. Then I store it in a zip-lock bag with the air sucked out. 

Peel off the avocado skin and smear on the bottom of the toasted English muffin.

Top with the spinach and bacon.

Lay the egg slices on top and sprinkle with salt and pepper.

Voila!

According to Nutrition Data, this sandwich is a good source of protein, vitamin A, folate, phosphorus and selenium, and a very good source of vitamin K and manganese. It’s also super filling with its fat, fiber and protein content.

I think I found my new favorite breakfast!

      I didn't think I'd like avocado on it but I did! Avocado has really grown on me over the last year. I went from hater to looking for ways to eat it.

    yum! I will have to do that. I love avocado toast. I love hard boiled eggs on toast. Why did I never think of combining?!?

    If you boil the egg just for 5 minutes so the white is set but the yolk is half runny, the combination of yolk and avocado is just heaven. Thanks Roni for the brilliant ideas.
