A Simple Tummy-Trouble Broth

I’m back from my trip to Vegas (where I ran my second marathon!!) with a simple broth recipe. Truth be told, my stomach hasn’t been right for days. I’m not sure if it’s the food I ate while traveling, the run or a combination of the two but I’ve been having some nasty tummy troubles.

To combat, I decided to make myself a simple broth using 2 ingredients that, according to WebMD, may help.

  • Ginger is an herb commonly used to treat various types of “stomach problems,” including motion sickness, morning sickness, colic, upset stomach, gas, diarrhea, nausea caused by cancer treatment, nausea and vomiting after surgery, as well as loss of appetite.
  • Lemon is (also) used to aid digestion, reduce pain and swelling (inflammation), improve the function of blood vessels, and increase urination to reduce fluid retention.

I happen to keep both in my freezer for recipes (click here to see the frozen lemon trick) and they are easily grated into soups. Unfortunately I didn’t have any homemade broth so I had to use a carton of store bought. Regardless, the result was quite tasty!

A Simple Tummy Trouble BrothFunny enough I also added thyme as I thought it would go really well with the ginger and lemon. Little did I know thyme is also sometimes used to treat diarrhea and gas — according to WebMD anyway.

I also added carrots as I felt I needed at least a little something of substance and, well, they were all I had. Plus carrots and ginger are a yummy combo.

Here’s what I did.

  • 1 carton (4 cups) chicken broth
  • ~10g grated frozen ginger
  • ~10g grated frozen lemon
  • 1/2 tsp dried thyme
  • 1 cup diced carrots

Put everything in a pot and bring to a slow boil. Then simmer until ready to eat.

Sometimes, simple is the way to go.  I’m hoping to eat something more solid by dinner. We’ll see.
