Snack Girl’s Ham and Cheese Zucchiniwich

There are quite a few bloggers I admire from afar but only a handful I subscribe to. Snack Girl is one of them. Her site is full of fun simple food advice for those looking to eat a little healthier and a lot less processed.

Lisa reached out to me when her book, Snack Girl to the Rescue! was coming out and asked if I’d like a copy to review.

Ummm, of course! And here’s why:

Lisa is sharing her best, tried and true advice on avoiding common weight-loss pitfalls, shopping healthier on a budget, and getting in shape, along with 100 recipes for fun, quick, and affordable meals and snacks—all of which clock in under 400 calories and are Weight Watchers friendly!

There are no gimmicks, no short cuts, it’s just how you’re supposed to live: a healthy, balanced life. Lisa shows us in this book that nobody is perfect — but with a few minor tweaks, you can change your lifestyle, be happy and be healthy.

A woman after my own heart.  It’s like we were cut from the same cloth! How can you not love her?

Snack Girl's Ham and Cheese ZucchiniwichAnyway, Lisa and I decided to do a recipe exchange. She’s posting one of my ideas on her blog today and I chose a recipe from her book.

I went with the Ham and Cheese Zucchiniwich because a.) it sounded super simple — you guys know I have a recipe following problem  b.) I had all the ingredients on hand and c.) I REALLY wanted something cheesy!

Well, this TOTALLY hit the spot. Here’s what I did (it does slightly vary from her recipe)…

  • 1 medium zucchini
  • 1 oz of your favorite cheese, cubed (I used monterey jack)
  • 1 oz cubed ham
  • 1 tsp grainy dijon mustard

Heat the broiler or toaster oven.

Cut the zucchini in half lengthwise and hollow it out with a tablespoon.

Toss the ham and cheese with the mustard. Make sure the cubes aren’t too big. They need to fit in the zucchini!

Pile the ham and cheese in the zucchini boats.

Place under the broiler for about 2-3 minutes until the cheese melts and starts to brown.

Let it cool for a few minutes before biting into the cheesiness, and yes, it’s totally pickup-able!

My nutritional info came out slightly different from Snack Girl’s, probably because I used a different cheese. Here’s what I’m estimating based on MyFitnessPal.

      Her original recipe called for popping them in the microwave for a minute or 2. I skipped as I like the crunch and I didn't want to make them too mushy. Thanks for the feedback on the email!! That makes me so happy!!

    Whoa, this looks cheesy and awesome! I love making zucchini boats, but I most often fill them with pizza-type stuff. The combo of ham, cheese, and grainy mustard is something I never would have thought to put into a zuke boat. Can't wait to try it out! The cookbook looks really fun! I placed a hold on it at my library.

    We had a great crop of zucchini this year and this looks delicious. I am trying to minimize the bread in my diet to lose a few pounds. I love ham and cheese, too. I must check out her cook book.
