Apple and Walnut Yogurt Parfait

I’m back from FitBloggin and SO happy to be home in my own kitchen. Don’t get me wrong, traveling and eating out are GREAT but I’ve been overindulging in the food department and my body simply does not like it anymore.  

It’s funny because I really never thought I’d be one of those people to avoid foods I like because of the way they make me feel but the cleaner my diet has gotten over the years the more noticeable it is when I eat “not so good for me” choices like pizza with mounds of cheese, fried pickles and cheese fries.

This morning I decided to wait until I was hungry and then make myself something with simple foods. I saw yogurt in the fridge and it sounded perfect with some apple, cinnamon, nuts and this awesome honey I brought home from Savannah!

The “honey guy” at the store said his favorite was sourwood so I tried a sample and immediately fell in love.  It was really rich and strong. Of course any honey would work in this but if you have a chance to try different honey varieties at a local farmers market or specially store give them a try. It’s amazing how different some of them can be!

Anyway, here’s what I did. Hopefully it will inspire you to make your own Yogurt Parfait this week!

  • ~1/2 cup nonfat Greek yogurt (130g)
  • small green apple, cubed (~100g)
  • 1/2 oz walnuts, finely chopped (14g)
  • Cinnamon to taste
  • 1/2 tbsp honey (10g)

Find a fun glass and layer all the ingredients starting with the yogurt, then apples, then walnuts, a dash of cinnamon and the honey.

Make sure to drizzle the honey lightly. You’ll be amazed how a little goes a long way when you don’t mix it in.

When I prepare yogurt this way I’m always more satisfied. I swear it’s a combination of taking time to prepare something and the fun factor. I mean look how cute it is!

Note: The best light in my kitchen for quick shots is on the floor by my sliding doors, just in case you are wondering. My family has gotten used to me laying there with my camera and a random snack all the time.

    You bought almost the same honey I did. Except I HAD to have Honey for Cheese. Because my fave "bring to" appetizer is goat cheese with honey and walnuts! Love simple to figure out how to make one with no cow's milk...

      I ALMOST bout that one but replaced it with the grilling one instead. Cheese is just too much of a weakness for me and with honey made for it, well, I'd just have a reason to indulge every night!
