    I've never liked eggplant, but I am definitely going to give this a try. The way you described the texture is what got me...usually eggplant is way too mushy for me so I'm not ever sure if it's the texture or the flavor that I don't enjoy. So I'm going to try this and find out! Thanks so much for the great idea.

    I think if you skinned the eggplant, diced up, roasted with with spices, it would be really good to add to some scrambled eggs with some salsa. I would enjoy that!! Thanks for this great idea.

    I normally don't leave comments, but these pizzas were amazing. I tried making eggplant pizza, on my own, in the past and it turned into a gross mess. Thank you for your clear instructions.
