I’m am loving fall right now! It’s been gorgeous. The leaves are at their peak.
And I have a host of new fresh produce to play with, such as winter squash and cranberries.
Being raised with canned jellied cranberry sauce as a kid, I never really had fresh cranberries. I don’t know what to do with them — suggestions welcome in the comments! *hint* *hint*
I decided to start simple and make a smoothie.
The cranberries added such a nice tartness and color to my morning smoothie.
It was a nice change and a filling breakfast.
Here’s what I did …
- 1 small apple
- 1/2 cup fresh (or frozen) cranberries
- 1/2 cup plain yogurt (I used full fat)
- 1 tbsp honey
- 1/2 tsp ground cinnamon
- 10 ice cubes
Put the apple, cranberries and yogurt into the blender first. This is always my technique when working with fresh (unfrozen) fruit or vegetables.
It blends all the fruit into a nice puree.
I didn’t put the honey in right away so I could taste how tart the base would be. This way I could add just enough for my taste.
I decided on a tablespoon of honey to take the edge off. Those cranberries are tart!
Add the honey, ice cubes and cinnamon to the blender and blend again until smooth. Pour into a nice class and marvel at your perfect fall smoothie!
So much better than that juice cocktail from the grocery store. ;)
