Using Leftovers: Pork and Sweet Potato Fried Rice

I wasn’t planning on sharing this but then it turned out so good I snapped a few photos and here I am.

I’m hoping it gives you a few ideas on using leftovers in a new way.

The other day I made Simple Cumin-Dusted Bone-In Pork Chops with baked sweet potato fries. We ended up having one chop left plus 15 or so fries. It was hard for me to not just not eat them — I have a habit of being the family “garbage disposal,” consuming whatever we have left after dinner instead of saving them.

I’m working on it.

Anyway, I pulled out the chop and fries and for some reason “fried rice” popped into my head. I hesitated a bit as I wasn’t sure how the sweet potatoes would taste in the rice but I’m glad I took a shot. They added a nice creamy sweetness!

Using Leftovers: Pork and Sweet Potato Fried RiceSurprisingly, The Husband ate this and he doesn’t even like sweet potatoes! The kids were a bit harder to convince but I got them to take a bite. Me? phft I could have eaten the whole batch as my meal. I’m a throw-everything-in-one-pot kind of girl. It was TASTY!

Here’s what I did… I realize this is very specific to what I had on hand but again, take the idea and run with it using your leftovers!

Cut away all the meat from the bone of the leftover pork chop. Cut into cubes.

Heat a non-stick skillet over medium-high heat. Coat pan with cooking spray.

Warm the pork for a minute in the skillet. Add the spinach and sweet potatoes. Once the spinach cooks down a little, add the rice.

Toss everything until well combined and warmed through. Add the soy sauce, mix well, and cook for a minute just to combine the flavors.

Remove from the heat and enjoy!

I served it alongside tilapia and broccoli. It was a super quick, tasty dinner!

I’m REALLY estimating this nutritional info but I wanted to share something to give you an idea. I’m basing it on 4 servings of a side dish but again, double the servings and it makes a great meal!

    I'm making pork chops tonight with baked sweet potatoes and I have leftover rice in the fridge! I see this in my near future. :D
