That’s right … one of my recipes (and consequently ME) on the TODAY SHOW!

I can hardly believe it myself!

It’s actually quite a funny story …

As you guys may know I work with The Laughing Cow and have for some time now. I love our relationship and really enjoy getting creative with their products. It’s so fun!

Last week my Laughing Cow contact let me know about a contest the “Today” show was having about healthy burgers so I decided to submit my Bacon Cheese Inside Out Turkey Burgers and wouldn’t you know, it won!

I’m now one of three finalists going to NYC for their Too Good To Be Healthy competition! I’m going to be presenting the burger to Al Roker and Willie Geist!

OK, I can’t think about it or my head may explode so I’m just going with the flow. I hop on a train tomorrow and will be on air Friday. That’s all I know at the moment. Keep an eye on my Twitter account and facebook page for updates. I’ll be sharing more breaking news there.

Bacon Cheese Inside Out Turkey Burgers As Will Be Featured on The Today Show!I made the burgers again last night with the slight changes to the recipe I mentioned in the original post. This is the one they will be using for the show!

  • 8oz extra-lean ground turkey (This time I used the 93%)
  • ~1/3 cup grated zucchini (75g)
  • ~1 tbsp grated onion (25g)
  • ~1 tbsp minced garlic (15g)
  • 4 tbsp real bacon bits (28g)
  • 1 tbsp Worcestershire sauce
  • 1 egg
  • 3/4 cup old-fashioned oats (60g)
  • Pinch of kosher salt and ground black pepper
  • 2 The Laughing Cow Mini Babybel® Light Rounds

Put all the ingredients in a bowl except the cheese.

Mix well. The mixture will be moist.

Separate the meat mixture into 4 equal parts of about 4 ounces each. Now take 1 of the 4-ounce portions and separate into 2 small patties.

Cut a Babybel round in half lengthwise making two circles.

Place one of the cheese circles in the center of a small patty.

Top with the other small patty and form together.

Repeat for the other 3 burgers.

Grill the burgers about 5-6 minutes a side. They will stick, especially if the grill isn’t hot enough. Use nonstick spray or rub the grill with a bit of oil to help.

I used my grill pan this time instead of the outside grill.

I wanted to see how they would come out and I wasn’t disappointed. Neither was The Husband OR the 8-year-old — they really like this burger! And if you know my husband, he’s not one for “stuff” in his burger meat. He’s more of a straight up beef guy. The 2-year-old? Well that was a different story.

I ate mine on a whole wheat hamburger bun with some baby spinach and a squirt of ketchup. It was perfect!

    OH MY GOODNESS!!! Roni, these are the only way I will eat a turkey burger!!!! They are the absolute best!
    And funny story….my hubby doesn’t even realize he is eating zucchini….
    I’ve made it numerous times and for others as well and they have all raved.

    Made this in time to sit and eat it while I watched the Today Show. Sorry you didn’t win as the burger is delicious and yours was the lowest calorie, too. I don’t know where I would get ground buffalo meat anyway.

      Hi Lisa! It should work but I think it make be easier/better to make the meat mixture and then stuff and grill them the next day. The patties are very moist with the zucchini.

    Hey Roni!! I made these for dinner last night and they were absolutely amazing!! I really touted the whole “these were recently featured on Good Morning America” to get my husband and kids to go along with them!! The husband and I LOVED them!!! We both even brought leftovers to work today for lunch. Sooo good. As far as the daughter, well, she’s a picky eater and I haven’t been nearly as good about making her try things are you are with Ryan!!

    The ingredients list says 8 oz of turkey, but the instructions mention dividing in to four equal parts of about 4 oz each. I’m just curious if the stats are for 8 oz or 16.

    We made these before, and they are de-lish!

      Got it! I used a whole pack of turkey. And made 5 burgers from it. My math may be a little off, but I swag about 220 calories or so per burger. So that’s still pretty good! Plus, a bump in the protein, too.
