I did it again. I bought a HUGE bunch of kale and have challenged myself to feed it to my family this week.
Kale can be quite, ummm, hearty when served raw, but if you massage it with a bit of acid, like lemon juice or vinegar, it softens the leaves a bit taking away the bite that turns off some folks.
That’s what I did for this idea and the tartness that came with doing so was evened out by the sweet blueberries and dressing. The almonds also added a nice crunch, making this a really tasty light lunch.
Here’s what I did…
- 4-5 large kale leaves, stems removed and chopped (100g)
- 1 tbsp lemon juice
- 1 tbsp apple cider vinegar
- Couple pinches of salt, divided use
- 1 wedge of The Laughing Cow Smooth Sensations Cream Cheese Spread Strawberries & Cream
- 2 tbsp unsweetened almond milk
- 1 tsp honey (5g)
- Pinch of dried thyme
- About 1/3 cup fresh blueberries (50g)
- 1/2 oz almonds, roughly chopped (14g)
Wash and prepare the the kale. Remove the stems and ball up leaves to run your knife through making thin ribbons. Place in a bowl with the lemon juice, apple cider vinegar and salt. Massage the leaves and set aside.
While the kale is wilting, prepare the dressing. Mash the The Laughing Cow Smooth Sensations Cream Cheese Spread…
…with a fork and then whisk in the almond milk, honey, thyme and a small punch of salt. Set aside.
Spread the kale on a plate and top with the blueberries and almonds.
Drizzle with the dressing and enjoy!
