Flourless Chocolate Muffins

Every once in a while I get a hankering to experiment with a muffin idea.

Sure, I could just use one of the million tried-and-true muffin recipes out there, but where’s the fun in that?

I’d much rather get creative and push the envelope to make something new, with foods I actually want the kids and I to eat. Who needs processed white flour when you can use oats and almonds!

Honestly, I just enjoy the experimenting process. It make me happy, and even happier when my kids like the results.

I was shocked at how good these came out. They weren’t traditional, but they were tasty with a hearty muffin texture.

I really enjoyed them plain but the first batch I made yesterday didn’t come out sweet enough for the 7-year-old. I made them again today, adding in some mini-chips, which ended up melting into the batter.

The 2-year-old liked them both ways. He didn’t care as he munched them from the bottom up.

Just for fun I used a mix of honey, molasses and maple syrup to sweeten them. I thought it would add an interesting flavor, and it did. If you are missing one of the three, just double up on another. Again, I’m not giving you the world’s most perfect muffin recipe. This is just another idea to get good stuff into you and the kids. :)

Flour-less Chocolate CupcakesHere’s what I did….

  • 1 1/4 cups old-fashioned oats (100g)
  • 1/4 cup almonds (35g)1/4 cup unsweetened cocoa powder (20g)
  • 1/4 tsp salt
  • 1 medium ripe banana
  • 1 tsp vanilla
  • 1 tbsp honey (21g)
  • 1 tbsp 100% maple syrup (20g)
  • 1 tbsp molasses (20g)
  • 1 egg
  • ½ cup plain non-fat Greek yogurt (114g)
  • 28g mini chocolate chips
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Preheat the oven to 375 degrees.

Process the oats, almonds, cocoa powder and salt to make a “flour.”

If you have almond meal and oat flour you should be able to use the same gram equivalents but I haven’t tried it yet.

In a separate bowl, mash the banana and whisk it with the vanilla, honey, molasses, maple syrup, egg, and yogurt.

Stir in the chocolate chips.

Wet Ingredients for the Flour-less Chocolate Cupcakes

Sift the dry ingredients into the wet.

Jut shake and then use the back of the tablespoon to press the clumps.

This will help eliminate the chunks that form from the oils in the almonds.

Add the baking soda and baking powder and mix until just combined.

Evenly distribute in a 6-cup muffin tin.

Bake for 18 minutes.

    I love that you post so many recipes that I always have all the ingredients to sitting right here at home! I'm making these tomorrow! Have you changed the way you write up your posts since switching to the new GLB look? It seems like there is more of a story or background or something. Or maybe it's the pictures that are different - like more of them? I can't figure out what it is but I like it!

      I've glad you like the new look! I'm still getting used to it. The only thing that really changed is the size of the images and the featured image at the top. Everything else is pretty much the same. I add more "Story" when the kids are involved. More to share. :)

    Glad to have found your blog and looking forward to trying your recipes.... esp this one! I have one of those little blenders and haven't used it much ~ great excuse to get it out of the pantry. :) And love that your kiddos were taste testers.... this will be a fun recipe to make with my kids!

    These sound amazing. I can't believe there no flour and so little sugar. I'll be giving them a go at the weekend. And I agree with the poster who said that she always has the ingredients at home already. That's one of the reasons I love you recipes - I can throw together almost everything you make without having to do a big shop!

    I just made these for my kids and they are SO good!! I only used the honey (just 1 1/2 tbsp) and not the molasses and maple syrup and they were very sweet (I did throw in a few mini chocolate chips). Thank you for the great recipes!
