What Came Home?
First, let me apologize in advance for my upcoming absence on the blog. Next week I'm hosting FitBloggin', a conference I organize, and this year I moved us to the West Coast. To say I'm stressed in an understatement. I've been living, breathing, and even dreaming FitBloggin' for the past couple of weeks.
This has, of course, affected my cooking. We've been eating out more and I've been slacking on lunches in particular. Â Thankfully, the 8-year-old is on summer break, so he's home or at day camp and they provide lunches (don't ask -- his options may be worse than at school.) The 2-year-old still needs lunches 3 days a week and yesterday I almost forgot. As we were running out the door I pulled this together. He seemed to like it. The peas defrost by lunch time and in the process keep the cheese cold.
It doesn't look like enough but how much does a 2-year-old really eat? Sometimes I'm lucky if I can get him to take 2 bites of a chicken nugget and a cube -- yes one cube -- of apple.
I may post 1 or 2 more times if I make something on a whim. If not, you probably won't see me here until July. If you are interested, check in on my weight-loss blog, Just Roni. I'll be posting updates there.

Seems like you are also a pretty active person 🙂 I like the recipe,
and would like to ask you, PLEASE make more of those "on-the-go"
lunches! They're good, time-saving, and simple.

How many peas were in there, i work a little with the toddler\preschool age and it looks to me like he ate a good lunch. Good luck at your conference.
