My first post since the new design! The past few days have been stressful to say the least. I never thought my site would get so big! Currently, GreenLiteBites has over 950 posts, 22,000 comments, and some recipes like the Banana Oatmeal Cups have been pinned over 500,000 times!
This TOTALLY blows my mind. Especially considering I know how many posts didn’t make it —Hello random food photos on my computer!
Now I’m hoping to focus on cooking again instead of being distracted by site maintenance. There’s still a few lingering things to be done, but overall I’m happy I took the leap. I hope you like it. Please let me know if you are having any trouble navigating and expect a few small changes in the coming weeks.
OK, now that that’s out of the way, it’s time for some turkey burgers!
I’m calling these The “Oh-These-Are-GOOD” Turkey Burgers because that’s what the 7-year-old said after taking his first bite.
He didn’t THINK he’d like them because there was green and red stuff (peppers) visible and God knows if something looks just slightly off the kid hops on the ewww bandwagon. Although, he knows not to really say anything anymore because it doesn’t work on me. He’s still gonna eat it.
Anyway, the idea behind the burgers was to bulk them up with some good stuff and use up a bag of frozen peppers I’ve had WAY too long.
I was successful on both accounts and now I have leftover cooked patties in my freezer for quick lunches/dinners whenever I want!
As for the “good stuff” I’ve experimented with adding ground flax to ground meat before but it tends to fall apart. However, you can counteract this by adding wheat bran. Now I realize flax and bran are two odd things to add to burgers, but think about it — how is it any different than adding breadcrumbs to meatballs or meatloaf? It’s isn’t, plus flax and bran have WAY better nutritional profiles than plain breadcrumbs.
The Husband wasn’t home when I made these but later I warmed one up for him and he happily ate away. When I asked how they were, he simply said, “Good.” Which, as you know, is the most excitement I’ll get out of him. Darn non-foodies.
Anyway, let me get to the recipe up before I write a novel. Here’s what I did …
- 1 8oz bag of frozen mixed pepper strips
- 20 oz package of ground turkey (93/7)
- 4 tbsp ground flax meal ()
- 1/2 cup wheat bran ()
- 1 egg
- 2 tbsp garlic powder
- 2 tbsp Worcestershire sauce
- pinch of kosher salt
Spread the bag of peppers on a cutting board and chop them a little smaller. You could, of course, use fresh but I’ve had this bag in my freezer forever and it was time to use it. I also like knowing I can use a bag of frozen when fresh is unavailable.
Put all ingredients in a bowl
Mix with your hands until combined.
Form into 8 – 4oz patties.
I actually had 1oz leftover and made a small patty for the 2-year-old with it.
Preheat your grill and spray or rub with a little oil as turkey burgers have a habit of sticking.
I cooked them about 7 minutes a side on a hot grill but over medium-low heat.
While I grilled, one kid stomped bubbles …
and the other practiced lacrosse.
It was FINALLY a nice day out here.
I grabbed some whole wheat buns and cheese for the boys.
Dinner was served and the goofballs and I had a great time.
I’m only calculating the nutritional information for the patty so you can add in your own bun of choice. I see myself eating these on whole wheat English muffins in the future. :)
