I’ve been wanting to post this idea for WEEKS! It’s been so long I almost forgot about it which is not like me. Normally I’m a cook-and-post kind of blogger. I like to post while everything’s still fresh in my brain because honestly, I’m getting forgetful in my old age.

That being said, this one I remember well because it was TAST-Y and simple — a great combination. All you need are 4 ingredients.

Mixing the cheese into the baked potato made it it super creamy, and adding bacon bits and chives took it to that sinful level. Using Leftovers: Cheesy Twice Baked Potato

Of course the boys were not interested. They wanted boring old plain baked potatoes. However, if I would have just made and served these I think they would have liked them. As for me? I shall forever bake extra potatoes just so I can make these the next day!

Here’s what I did…

Unwrap the wedge of The Laughing Cow Light Garlic & Herb and mash it into the potato.

Make sure to get down to the skin. The more you get, the better and creamer the whole potato gets.

Top with a sprinkle of bacon bits and chives.

Bake in a preheated 350-degree oven for at least 10 minutes until warmed through and tips start to brown.

I served it with Roasted Brussels Sprouts and Dry-Rubbed Pan-Fried London Broil.

It was an amazing meal!

    Yum! I always have laughing cow - this time it's the cream cheese garden veggie but I could see this being really yummy with the chipotle queso flavor.

    All i have is some left over CHEDDAR cheese, I have no laughing cow.. but I have bacon bits!!!!! :) I have 2 huge left over potatoes from today:) YUM
