I’ve been wanting to post this idea for WEEKS! It’s been so long I almost forgot about it which is not like me. Normally I’m a cook-and-post kind of blogger. I like to post while everything’s still fresh in my brain because honestly, I’m getting forgetful in my old age.
That being said, this one I remember well because it was TAST-Y and simple — a great combination. All you need are 4 ingredients.
Mixing the cheese into the baked potato made it it super creamy, and adding bacon bits and chives took it to that sinful level.
Of course the boys were not interested. They wanted boring old plain baked potatoes. However, if I would have just made and served these I think they would have liked them. As for me? I shall forever bake extra potatoes just so I can make these the next day!
Here’s what I did…
- 1/2 leftover baked potato
- 1 wedge of The Laughing Cow Light Garlic & Herb
- 1 tsp real bacon bits
- Sprinkle of dried chives
Unwrap the wedge of The Laughing Cow Light Garlic & Herb and mash it into the potato.
Make sure to get down to the skin. The more you get, the better and creamer the whole potato gets.
Top with a sprinkle of bacon bits and chives.
Bake in a preheated 350-degree oven for at least 10 minutes until warmed through and tips start to brown.
It was an amazing meal!
