OMG, I’m on a roll in the kitchen lately! So much so I have 3 ideas photographed and waiting in the wings to be posted but I’m putting them on hold to share what I just made myself for an early lunch.

I’m also announcing a new category of ideas I’ll be sharing specifically for leftovers. I’ve been getting smarter when making dinners: buying slightly larger cuts of meat, roasting an extra potato or 2, even cooking something alongside dinner just because the oven is on. In the words of a good friend of mine, I’m working smarter not harder, and I thought I’d share how I use leftovers to create new meals.

Today it was steak fajitas. Using just 3 ounces of leftover London broil, I was able to whip up the most tasty, satisfying meal in all of 10 minutes, and the result was AMAZING! And light! For a mere 350 calories, I enjoyed a dish that could easily rival anything you could get at a restaurant.

Let me show you how I made it, and I hope it inspires you to look at your leftovers just a little differently this week. :)

Heat a small nonstick skillet over medium-high heat. While it’s heating up, warm the tortillas and set them aside.

Spray the skillet with cooking spray. Add the onion and then top with the peppers.

While they are browning, smear The Laughing Cow wedge on the tortillas.

Don’t worry about burning the onion. You want to get a nice char on them. It adds wonderful flavor.

Toss everything in the skillet and cook until you see a nice browning happening, about 3 minutes.

Add the steak.

You don’t want to cook it too long, just enough to warm it. Toss it a few times, cooking about 30 seconds. Then remove from the heat and let it sit for another 30 seconds.

Split the steak, peppers and onion and top the cheese on the tortillas.

Roll up and enjoy!

    I’m excited about the new leftover feature. I personally struggle with using leftovers so I’m sure it will help me out.

    Looks good! But you got to tell me what you do with those leftover baked potatoes because I have 3 sitting the frig and I don’t know what to do!

      left over baked potatoes make the BEST home fries. Just chunk up and sauté in a fry pan with either butter or olive oil.

    I love fajitas! Steak or chicken or both, it doesn’t matter to me. The amount of meat you used insures that this dish is healthy. And the red peppers add a nice bit of color.
