Thai Inspired Cucumber Cashew Salad

This morning I checked my email to find one of Kalyn’s latest post, Wake-Up-Your-Mouth Thai Cucumber Salad and I immediately knew what I was making for lunch.

Of course I modified the idea using what I had on hand. The result couldn’t have been more satisfying! It was fresh, light, tasty, and REALLY filling. I guess eating a whole large cucumber will do that to you!

Thai Inspired Cucumber Cashew SaladI think simple salads are going to be my new “thing.” Sometimes I get caught up on the idea a salad needs start with lettuce or “greens.” SO not the case.

Anyway, here’s what I did…

  • 2 tbsp lime juice
  • 1 tsp soy sauce
  • 1 tbsp honey (21g)
  • 1/2 tsp tabasco
  • 1/2 tsp minced garlic
  • 1 large English/Fancy cucumber
  • 1/4 cup mint chopped
  • 1oz cashews (28g)

Whisk the lime juice, soy sauce, honey, tabasco, and minced garlic together to make the dressing.

Let it sit.

Chop the cucumber into bite size pieces. Just quarter and then slice.

Chop the mint. I happen to still have fresh in my small herb garden.

It’s surviving the cold quite well!

If you don’t have fresh, a pinch or 2 of dried would be just as good.

Toss the mint and cucumbers together.

Pour on the dressing and toss to coat everything. Pile on a plate and enjoy!

    I just made this for lunch, I used chili garlic paste instead of the Tabasco and minced garlic and cilantro since I didn't have mint, topped with some extra bean sprouts from last night, it was great! Reply

    Thanks so much for this recipe, it was delicious! I added sliced grapes and put it over brown rice, and it was a great cold lunch! I didn't have Tabasco sauce so I added just a PINCH of cayenne pepper. It was very filling with the brown rice. Reply

    This was very tasty! Hubby & I loved the twang the tabasco imparted to this salad. I served it with a teriyaki pork tenderloin & basmati rice. I will definitely make this again! Next time I'll try it with your Chinese 5 Spice Pork Loin recipe. Reply
