		<description><![CDATA[I don&#039;t know about organic eggs vs. farm eggs (here in Chile are about the same thing, but I can imagine how they can not be the same thing in a country were an &quot;organic&quot; label costs you moree bucks than the regular thing) but farm eggs are far more superior. The yummy, almost buttery taste. The orange, bright and huge yolk. The sticky and firm egg white. The greenish/blue colour of the egg shell. I love farm&#039;s eggs :)]]></description>

I don&#039;t always buy organic but I did start getting my eggs from a local farm when I can. I haven&#039;t hopped on the organic bandwagon, I try to focus more on local and fresh. Organic is a bonus but not something I HAVE to have.

Do you use organic eggs?  BTW what is your take on organics in general?  I am reading a lot of confliciting articles these days. I am always trying to keep to a food budget and was wondering where you fall on this one?  Thaks again for everything I have followed you for years.  (Side note: I gave your cookbook to 4 people for Christmas last year and they love it).

I make omelets just like you!  I use a smaller pan and one egg though because lately eating 2 eggs at a time gives me an upset stomach.  Not sure what that&#039;s all about...maybe it&#039;s because I&#039;m getting old? (40)]]></description>
