Lemon Dill Salt – Plus 1 Way to Use It!

I keep getting Dill in my farm share and I must admit, I’m not the biggest fan. I just don’t know what to do with it on a day-to-day basis.

Don’t get me wrong, I like a good pickle, but I buy mine in a jar and I’m just not ready to hop on the canning bandwagon yet.

However, after my Basil Salt adventure I am into making my own seasonings!

Lemon Dill Salt - Plus 1 Way to Use It.The basil salt was/is a smashing success. I use it on popcorn, kale chips, pasta, potatoes, eggs, pretty much anywhere I use a little pinch of salt. The flavor isn’t overwhelming but it does add a nice dimension.

So instead of wasting the Dill I thought I’d give it a try with a fun twist. The result was a wonderfully flavored salt. Here’s how I did it.

  • 1/3 cup dill packed
  • 1/3 cup kosher salt
  • Peel from 1 lemon

Preheat the oven to 275 degrees.

Put all the ingredients in your food processor or bullet.

Blend until it forms a nice paste.

Spread the paste on a cookie sheet.

Bake for 30 minutes.

Run it through your processor to break up the chunks. It will turn it into a fine powder. Place it in an old space jar until ready to use.

Tilapia with Lemon Dill Salt over Kale

Right after I made the salt I had to try it out. My vision was to use it mostly as a fish spice as I think lemon/dill is a nice combo for seafood.

So I quick cooked some kale in a skillet with a little water and a sprinkling of my new Lemon Dill Salt.

Then I dusted both sides of 2 tilapia fillets with the salt as well and quick fried them in the skillet with a bit of non stick cooking spray abut 2 minutes a side.

The dish was amazingly simple and tasty! The salt was the perfect spice for tilapia and added a nice flavor to the kale. I can’t wait to try it on salmon next!
