Quick Kale Eggs [video]

I don’t know what came over me this morning. I was about to make breakfast and then thought, Hmmm I should record this. It’s been awhile since I’ve done a GreenLiteBites video.

And there you have it. The Quick Kale Egg video was born. As you know, “quick” for me and videos means about 10 minutes. I was going to edit it down more but watching Little Bean at the end flirt with taking a bite is pretty funny. He didn’t end up eating a lot but I got a few bites in. :)

    Oh man is Evan CUTE! And so funny and fun to watch. When you poured the water into the pan and it sizzled, he was mezmerized! Congrats on getting him to eat some. And you know, I think this might be only the second GLB vid that I’ve watched where you are not wearing GREEN. Pink looks nice on you, Roni.

    Thanks! I used to only wear green for me “brand” but got over it. I thought it would be a cute touch but once time got too tight to do regular videos I figured it didn’t really matter.

    Roni, you have totally turned me into an egg person! I have them almost every day for breakfast now. Today I did your “roll-up” omelette with collard greens and some turkey bacon – delicious!! So I just wanted to say thanks for the egg-inspiration :) Evan is so cute in this video by the way.

    LOVE your shirt! Where did you get it?
    I was on pins and needles watching you cut your kale but looking at the camera instead of your fingers, obviously you are better with the knife than I :)
    I hardly ever buy kale, but now I will try it again!
    Evan is SO cute! I have three daughters and I have the same happiness when I get them to eat good food. It makes me feel like I am protecting them from diseases, I hope that isnt weird.
