Bok Choy Tuna Wraps

Joining a CSA is definitely a challenge. Half our share are things I’d never think of buying. Not because they aren’t good or I don’t like them, but simply out of habit.

Take Bok Choy for example. I’ve never bought a head of Bok Choi. According to, 1 head of this crunchy, fun vegetable has 751% of our daily Vitamin A, 630% of our daily Vitamin C, 478% Vitamin K, 139% Folate, 88% Calcium, even 37% Iron all for about 110 calories.

What a great vegetable to use as a meal bulkier. It drives down calories and ups nutritional quality.

I’m sold. Bok Choy Tuna Wraps

Yesterday I was inspired to make something with it for lunch. I used the leaves as a wrap and the stems as a crunchy tuna salad bulkier. I was shocked how quick, easy and light this dish turned out. It was filling, satisfying and fun!

Here’s what I did.

  • 6 stems of Bok Choy with leaves large enough to wrap
  • 1 5oz can of Tuna packed in water drained well
  • 1 Wedge of The Laughing Cow Light Garlic and Herb
  • 1/2 tbsp Soy Sauce
  • 1/2 tsp ground ginger

Pull out just 5 little ingredients.

Washed the Bok Choy and pull off 6 stems with large, good looking leaves.

Cut the stems just below the leafy part and dice.

Mix the diced stems, tuna, Laughing Cow, Soy Sauce, and ground ginger to make the tuna salad.

Take a scoop of the tuna salad and place in the center of a Bak Choi leaf. Roll.

    I would describe it like a mild celery with out the celery-ness. lol It’s got the slightly natural saltiness and it’s super crisp. I like it raw but it’s also great in stir frys!

    Just discovered bok choy through bountiful baskets about a year ago. My favorite was cooking it with some crispy bacon. I agree that it tastes like celery. I will totally be trying this tuna salad variation. Thank you for all your great recipes!

    What a great use for bok choy! I’m growing some in our garden, and harvested my first head tonight. Some will go into a stir fry, and the rest I’ll mix with shrimp and minced green onions in baked egg rolls. It’s wonderful braised, with a little fresh Parmesan shaved on top, too.

    I just got 4 heads of mini bok choy in my produce box! I wonder if it would go with taco meat like a lettuce wrap? I have the lettuce too so maybe I will stir fry the bok choy…

    I was going to buy some today but wasn’t sure what to do with it. So you can just eat it the way it is. I didn’t know that.
    I think I will pick up some on friday.
    Can you tell me what kind of taste it has.

    I researched a little and there it does have an enzyme that can inhibit thyroid function if eaten in large quantities. I don’t think 6 leaves is going to hurt me but you’re right, not sure i’d eat it raw daily. you could always slightly steam the stems before wrapping if you are worried about it.

    Question? One wrap is 165 calories, correct? Not all 6 wraps are a single serving of 165 calories. I know it probably sounds silly but hey you had some pretty low cal ingredients. :)
