I recorded this after my Saturday morning workout and before my house was bombarded with family members for Easter.
I put the quick instructions below the video and provided nutritional information for the way I prepared them. Mug eggs won’t replace my morning omelet but when in you’re in a hurry this is a great way to get in a healthy breakfast.
- 2 eggs
- 1 tbsp bacon bits
- 2-3 strips of red pepper chopped
- handful of raw spinach chopped
- pinch of kosher salt and pepper
Put everything in the mug.
Whisk with fork.
Microwave for 1 minute.
Flip and microwave for 45 more seconds.
If the fat content is high for you replace 1 of the eggs with 1-2 egg whites. Will work just as good!
