If I was a good blogger this idea would have been published BEFORE the Super Bowl not during it.
I made these today to have a little fun. Surprisingly, The Husband liked them even though he didn’t eat more than one.
Because he’s strange like that. I’ve stopped trying to figure out his weird homemade food quirks.
Anyway, I thought they ROCKED.
Crispy, fun, and tasty! Like something you’d get at a bar or a party but WAY less calories and fat.
Here’s what I didā¦
- 1/2 cup refried beans (vegetarian or fat free) (118g)
- 2 wedges of The Laughing Cow Light Queso Fresco & Chipotle
- 3 scallions chopped small
- 1/4 cup of red bell pepper chopped small
- 1/2 tsp chili powder
- 1/2 tsp dried cumin
- 16 Won Ton Wrappers
Pre-heat the oven the 350 degrees.
Put all ingredients in a bowl except the wrappers
Mix well until everything is combined
Lay out one won ton and plop about 1 tbsp of the bean filling in the middle.
Dip your finger in water and run along the edges of the won ton. Fold diagonal and seal the edges.
Lay on a cookie sheet sprayed with non-stick cooking spray and bake for about 20 minute flipping once. The edges will start to brown and the wrapper should crisp up.
Serve with a side of salsa for dipping.
Let 6 year old try them and tell you he doesn’t like them because they taste too much like salsa.
He doesn’t like salsa. lol
