Won Ton Nacho Bites

If I was a good blogger this idea would have been published BEFORE the Super Bowl not during it.

I made these today to have a little fun. Surprisingly, The Husband liked them even though he didn’t eat more than one.

Why?

Because he’s strange like that. I’ve stopped trying to figure out his weird homemade food quirks.

Anyway, I thought they ROCKED. Won Ton Nacho Bites

Crispy, fun, and tasty! Like something you’d get at a bar or a party but WAY less calories and fat.

Here’s what I did…

  • 1/2 cup refried beans (vegetarian or fat free) (118g)
  • 2 wedges of The Laughing Cow Light Queso Fresco & Chipotle
  • 3 scallions chopped small
  • 1/4 cup of red bell pepper chopped small
  • 1/2 tsp chili powder
  • 1/2 tsp dried cumin
  • 16 Won Ton Wrappers

Pre-heat the oven the 350 degrees.

Put all ingredients in a bowl except the wrappers

Mix well until everything is combined

Lay out one won ton and plop about 1 tbsp of the bean filling in the middle.

Dip your finger in water and run along the edges of the won ton. Fold diagonal and seal the edges.

Lay on a cookie sheet sprayed with non-stick cooking spray and bake for about 20 minute flipping once. The edges will start to brown and the wrapper should crisp up.

Serve with a side of salsa for dipping.

Let 6 year old try them and tell you he doesn’t like them because they taste too much like salsa.

    Oooo...These look good!! I'm actually to the point where I prefer 'homemade' pizza rolls, made from won-ton wrappers to 'regular' pizza rolls. There is just something about that nice, crunchy edge the wrapper has! ( hopefully I still have some, lurking in the freezer...and are still any good...) Reply

    These look good. I'm trying to think of a different filling because I hate refried beans! I must confess I've never purchased won ton wrappers. I don't even know what section of the supermarket they are in. Reply

    They are in the produce section. Usually next to vegetarian cheeses and such. Here are some other ideas.. http://greenlitebites.com/tag/wonton-wrappers/ You really can fill them with anything! Reply

    How do these taste cold or at room temperature? Can yiu make them ahead of time? Thanks Reply

      They are tasty at room temp but will start to lose crunch after awhile. You could make ahead but I'd bake closer to when you want to serve them. They are better out of the oven in my opinion.
