Whenever I mention Butter Beans online I get a lot of funny looks in the form of comments.
“What are they?”
“Where do you get them?”
“What do they taste like?”
Butter Beans are simply large Lima Beans. I don’t think I ever realized they weren’t popular until I started food blogging. My mom served them as a side dish just warmed from the can and honestly, I always loved them. They are soft, creamy and like most beans, have a mild taste. Side note: They also happen to make fun cookies!
Butter Beans make a great finger food for littles one but you have to watch the skins as they can cause a choking hazards. For now I puree them and have discovered Little Bean’s new favorite dishâ¦.
Can of Butter Beans
I get these at my Local Aldis.
Rinse the Beans
You want to remove as much sodium as possible.
Seriously, they are GOOD!
He thinks so.
And 6 year olds don’t lie. Well, not about food anyway. ;)
Wash an apple.
The Bean texture is a little overwhelming so I puree with an apple to change the texture a little and add a bit of sweetness.
Add to Blender
Put the apple closer to the blade as the beans may get stuck. I used 1 apple, 1 can of butter beans and 1/4 cup of water.
It’s creamy and tasty!
The beans are good alone but adding the apple makes them sweet and adding some full fat yogurt makes a complete meal.
I used 1/4 of the beans mixture and about 1/3 cup of yogurt.
Wait for Distracted Baby
We were all out of cloth bibs. The plastic ones threw him for a loop.
He has no idea I’m coming in.
Finally got him!
This was his second bite. He liked it!
REALLY liked it.
He needed to see for himself.
I put just the apple/bean mixture in single serve containers.
Can we have that again Mom?
It takes me a few days to get these up on the site and he’s already finished all the beans. It seems to be his favorite dish to date!
