So I’m a little breakfast nutty at the moment. Little Bean LOVES eggs and I find myself cooking them more and more.
This morning I decided to go super light (after last nights chocolate overload) and it was totally satisfying for just over 100 calories!
The trick to making this sandwich is using a mini egg pan designed for one egg (like this one.) It’s almost the same size of a sandwich thin making a small folded egg (or egg whites) the perfect filling for a half sandwich.
Here’s what I did…
- small slice of onion diced
- 1/2 green pepper cut into strips
- 1/2 oz deli ham cut into small squares
- 2 egg whites (or about 65g of egg white from the carton)
- Kosher Salt and Ground Black Pepper
- 1/2 of a whole wheat sandwich thin
Heat the small pan over medium and spray with a bit of non-stick cooking spray. Add the onion.
Dice 1-2 strips of the green pepper. Add them and the cut up ham to the onion.

Cook until the onion, peppers and ham brown a little.
Add the egg white and sprinkle with salt and pepper.

Let it cook for a a few minutes while the egg sets. Then fold over one half.

Let it continue to cook for a minute while you prepare the “bun.”

You know me and my ketchup! ;)
Flip the egg and cook for one last minute. Then add it to the “bun.”

The egg fits and hangs over just a little but it’s still a perfect pickup breakfast.

No silverware needed!
