Yay for Lentils!

Don’t make that face. I know, I know, lentils aren’t everyone’s favorite, BUT they are SO good for you!

Protein, Fiber, Iron, Potassium … do I need to keep going? Just check out their profile on World Healthiest Foods.

They are also super cheap and last forever in the pantry: a fabulous combo for this stock-happy mom.

Seriously, why aren’t I eating these things more? I’m hopping on the lentil bandwagon and taking baby with me…

Baby Food: Lentil 01

I made a cup which makes 4 adult-sized servings. It’s amazing how much these babies will bulk up once cooked.

Cover with water at least an inch over the lentils. Bring to a boil over high heat and then lower to a simmer and cover.

Simmer about 20 minutes.
Check the softness of the lentil. You can always add a bit more water if you think they are too hard, but since you’re blending them, this isn’t that much of an issue.

Puree.
The liquid left over from cooking should be enough; if not, add a splash more.

You might find the lentils to be more paste-like than most other baby foods. I tend to store it in this form and then add water or other purees when I serve.

    This has very, very little to do with lentils. But! I've never actually seen Jack Rabbit beans in the store, but my dad lives in Saginaw, MI, where there's a Jack Rabbit plant. And this is on top of the building --> http://www.flickr.com/photos/jhoweaa/5227146685/. Reply

    I homemade all the baby food for both of my boys and one thing they both loved was lentils with apple sauce. Totally gross to me, but boy they thought it was some amazing stuff. =) Reply

    Lentils are fantastic! One recipe I like a lot is called Snobby Joes, which are a vegan version of sloppy joes. http://www.theppk.com/2009/11/snobby-joes/ I swear that the flavours (not necessarily the texture) are the same as conventional sloppy joes. Reply
