First day back from the beach and I’m CRAVING some fresh, homemade food. Don’t get me wrong, I love boardwalk treats (pizza, fries, cheesesteaks, ice cream) but after a week, I had my fill. This morning I wanted something a little lighter and little fresher.
On our way home yesterday, we stopped at a farm stand in New Jersey. There’s no way I’m leaving the state without some fresh blueberries and corn on the cob. Two of my favorite summer foods that are both in season right now!
I didn’t have much else in the house except some stock pantry items, but I didn’t let that stop me from having fun. I whipped this up and couldn’t be happier! It was a new, super fun way to eat all those super sweet Jersey Blueberries!
Here’s what I did…
- 2 Laughing Cow Light Creamy Swiss Wedges
- 1/8 teaspoon ground cinnamon
- 1/2 tsp honey (~3g)
- 1 whole Wheat English Muffin Toasted
- About 1/2 cup fresh blueberries
Mix the cheese, cinnamon, and honey together until creamy.

Smear the cheese mixture on the toasted English Muffins.

Top with fresh blueberries.

Eat!
The Little Guy was quite intrigued. He came running over claiming his half and immediately took a big bite.

His reaction was priceless! At first he said,
“eww, I don’t like it.”
Immediately followed by a,
“ohh wait, this is actually really good!”
And then a,
“I’m not sure I want to eat this. Can I just eat the rest of the blueberries?”
LOL I don’t think he expected the cheese taste under the blueberries. It was tasty and added a great texture, but to a 6 year old it was completely unnecessary. Straight up blueberries it was, which is totally fine by me. :)

Yum…have you tried the Coco Lite Multigrain Pop Cakes? This would be good on them too. We found them at Whole Foods. They have this cool machine that pops them out. Wheat flour, rice flour, corn flour, water, sea salt, and crispy, crunchy yum! We had them with pb for breakfast.

Isn’t it funny how much you crave good healthy stuff after the reins are loosened a bit for vacation? It makes you appreciate your everyday yumminess!
Yet another winner from you!! This was the perfect bite I needed after Zumba tonight. I ate the last of the 5 lbs. of blueberries from Sunday’s Farmers Market.
Keep those wonderful ideas coming, ;) You are the reason I finally made the connection of healthy food portions several years ago. I lost a lot of weight, but it has been creeping up again. This time around I am making exercise a part of my lifestyle with yoga, Zumba and running. I need to start using weights too- any suggestions?

Thanks for the cinnamon + Laughing Cow idea! My breakfast this morning included a cinnamon raisin bagel thin with a wedge of plain light Laughing Cow and cinnamon sugar. Already craving another!
As for fruit + Laughing Cow, recently I made a “cherry panini” with a wedge of Laughing Cow blue cheese and chopped cherries, on a low-carb tortilla. Nom.
I tried this, but with one substitution. I used fat-free cream cheese instead. Just couldn’t do the Swiss with honey. Anyway, OH SO YUMMY! Definitely a new favorite! Fresh blueberries are expensive in my area right now too, so I stick to frozen and just thaw them; tastes just as great! Thanks for the idea.

This is to die for, so heavenly and yet no guilt when I eat it.
I tried a variation of this for breakfast this morning – it was really yummy! I did not have any swiss laughing cow cheese, so I used a little bit of cream cheese (like an earlier poster). A very satisfying breakfast.
