Crescent Pizza Pockets

I’ve had a package of crescent rolls in my fridge since Thanksgiving. THANKSGIVING! Sad I know but these things are quite a trigger for me. If I bake them I tend to want to eat the whole package. So they are safer in my fridge tucked away out of site.

But then I catch a glance and things like this happen. ;)

The idea is simple. Use a the crescent dough as the vessel for my favorite food of all time.. PIZZA!

The result was divine! Out of the oven the dough was flaky, the cheese oozing and the vegetables flavorful. I, honestly could have eaten the whole batch in one sitting. Sad, I know.

The Little Guy was convinced he wasn’t going to like them. Then he took a bite and declared,

“This is good! and it’s good FOR me! so that’s good.”

The husband took a bite and went, “meh” and made a ham sandwich. Crescent Pizza Pockets

Whatev. More or me.

  • About 1/4 of a sweet onion chopped
  • 1 small zucchini chopped
  • 1 plum tomato chopped
  • 1 bell pepper chopped
  • Pinch of Kosher Salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp italian seasoning
  • Package of reduced fat Crescent rolls
  • About 5 tbsp tomato paste
  • 4 oz fancy shredded part skim mozzarella cheese

Preheat the oven to 375 degrees.

Heat a skillet over medium heat and spray with non-stick cooking spray. Brown the onion. Add the zucchini, tomato, and pepper. Sprinkling with a pinch of salt, pepper, and the spices. Cook for a few minute allowing the flavors to merge and the vegetables to soften a bit.

Once done, set aside.

Meanwhile, pop open the crescent rolls. Sprinkle a little bit of flower on the counter to help with the sticking an roll out the dough. Pinch the perforations closed and roll a few times with a roller to flatten and stretch the dough a bit more.

Using a pizza cutter, cut the dough into 4 rectangles.

Smear tomato paste on each rectangle. Sprinkle with a but of kosher salt, onion, garlic and italian seasoning.

Pile the vegetables towards one side on the dough.

Top the vegetables with the cheese. Each one getting an ounce.

Pull the dough over the fillings and pinch closed forming the pockets.

Transfer the pocket to a cookie sheet. Piece the tops with a knife and sprinkle with a bit of the spices (onion, garlic and italian seasoning.)

Bake for 20-25 minutes.

Eat immediately! Well, wait for them to a cook a little bit. ;)

The great thing about these is that you can freeze the leftovers. Just let them cool. Then wrap in wax paper, cover with aluminum foil.

To reheat… unwrap, remove the wax paper. Then return to the aluminum foil. Pop into a preheated 375 degree oven for about 20 minute. Cut in half then return for 5 more. It’s comes out as good as the day you baked it! Here’s the one I pulled out the freezer this morning…

    1. Holy yum! I almost bought a tube the other day and then realized that I'd only want 1 and not be able to finish this- but this is the perfect make for now + freeze for later type thing this single girl needs! 2. um... Why do mean people have so much time on their hands? I mean you'd really take the time to fill in the form just to be catty? yuck... but maybe I'm biased because you can do no wrong in my book :) Reply

    It was actually pretty malleable. I just shifted the filling towards one side, pulled over the dough and pressed the seam. Only one gave me trouble. The perforation started to ripe but I was able to pinch it closed. Reply

    Thanks, Roni. My boys love Lean Pockets, but I'm not crazy about all the preservatives and other stuff in them. I'd feel much better about serving these tasty pizza pockets. Love your easy-peasey ideas for a busy mama! Reply

    @Nancy, seriously do you have nothing better to do with your time?? Get a life and get over yourself, no one gives a hoot if you like c-rolls or not. Keep that crap to yourself!     I like finding the occasional short-cuts like using crescent rolls. I am with you on not being able to stop at one. This is the kind of thing I would definitely try. I am just surprised that crescent rolls you've had since Thanksgiving hadn't reached their best before date. :) Reply

    They look great. If you ever run out of ideas to blog or video about, could you throw one in about freezing left overs? I am so so bad about freezing leftovers. I think I just don't know the proper way and worry about freezer burn, what's appropriate to freeze, proper containers, etc. Reply

    These look great! I noticed that the crescent rolls aren't in the ingredient list. Is the NI for reduced fat or regular? I love that you can freeze them! Great idea to take to work for lunch. Reply

    If you don't have something constructive to say - KEEP IT TO YOURSELF!! I LOVE this idea! Especially since you can freeze them. They would also be a good way to use up some vegie bits rather than letting them spoil. I am thinking this is a good avenue for some leftovers, too!! Great for lunch at work! Thanks, Roni.     They look like a lean pocket but 12 times better! Awhile back in the grocery store, I saw they now have crescent rolls without the crease. They are just a flat sheet of the dough. I took broccoli, laughing cow cheese (the blue cheese kind) and some chicken I cooked and put it in one and it was super yummy! Thanks for another great idea :) Reply

    YUM! I know what i am making for dinner tonight (literally!) . I will more than likely add turkey pepperoni or ground italian sausage- the Fiance will stroke out if i make him dinner without meat in it ;) that idea brings so many ideas to the table- like Liz was saying with brocoli and chicken.     The "refrigerated canned bread dough" area of the grocery store used to be where I picked up many staples... biscuits, cinnamon rolls, crescent rolls. I've been afraid to walk toward that area for the last 2 years. But I have only recently heard that they make reduced fat crescent rolls, and I've been thinking about checking them out... only problem is, can I handle it? Maybe I'll just stick with my frozen Trader Joe's whole wheat pizza crusts. So tasty! Totally respect that you used what you had in the fridge though; you gotta do that, especially if you can make something healthy (that the kid will actually eat). Reply

    This is a great example of a meal with all the benefits of fast/convenience food (especially with the freezer to oven feature!) but but with a much better nutritional profile. Is this in the top-10 most healthy foods in the world? No, but you're not going to eat it every day and sometimes, especially with kids, you need something simple, easy, fast and yummy!     Thanks for the idea! I'll definitely make these soon. I really like the idea of using the crescent rolls for four servings of dinner. If I make the rolls to go along with a regular dinner, I can never stick to eating only one. This is a much better use for them! They do like like a much healthier version of Lean Pockets.     I'm a Nancy too, but I thought these looked great! Rather than be snippy about the crescent rolls, maybe the other Nancy should think of it as inspiration for making the recipe more friendly for her. If she doesn't like cresecent rolls, maybe she could comment with a suggestion for a replacement. How about try the recipe with a whole wheat tortilla or something. Life's short!     And that's why I do the site. To INSPIRE! I buy Crescent rolls 1-2 a year. It's not the end of the world to use them for an idea. In my opinion, living and eating healthy is about finding balance. For me enjoy this now and then is a part of that balance. Reply

    I had so much trouble making the stroboli with the TJ's pizza dough. Stuck to the pan and couldn't get it off. But they tasted great. (I'm a novice) But I'll definitely try this with the crescent dough. Should be much easier to work with. Plus, I should have some for leftovers on those nights when I don't want to cook. Reply

    These are crazy amazing! I've made them twice now and the first time I used the store brand crescent rolls and they were very hard to roll up, gooey and thin. This time I used the Pillsbury rolls and they were MUCH easier to use. so so good. A new favorite! Reply

    Hmmm...We were having "make your own pizza" tonight but now that I've seen this idea I want to do this instead. Looks great! My kids love those Bistro things and I hate the fat and salt content this would be a good sub for school linches. Especially making ahead of time. Thanks for the great idea!! Reply
