So sorry for my short hiatus. It’s crazy times in these parts. The baby and the conference have been keeping me busy but the Easter holiday pushed me over the edge. I had a house full of grandparents and babies to feed. :)
The main course for Easter dinner was a marinated pork loin of which I have plenty of leftovers. Yesterday we ate some for dinner and today I turned a few slices into this amazing sandwich. I’m serious, it really was amazing. Let me say it again…. AMAZING! :)
I was inspired by the Cuban but used what I had on hand.
You can easily make something similar with any leftover meats–chicken, turkey, roast beef–but pork is more traditional. I also didn’t have swiss. I never buy swiss cheese so I used a slice of muenster that melted perfectly. For the bread I went with a pita.
Here’s how I put it together…
- 1 small whole wheat pita
- yellow mustard
- 1 oz of thin sliced deli ham
- 2 oz leftover pork loin sliced
- 1 oz slice of muenster cheese
- About 6 sweet pickle slices (enough to cover the sandwich)
Separate the pita into two circles by running a knife along the edge. I use these little gems from Trader Joe’s.

Smear the mustard on one side. Layer the ham, pork and cheese on top. Add the layer of pickles.

I fell in love with these a few years ago.

Seriously good.
Top with the other half of pita and grill on a panini press or the George Foreman like I did.

If you are using the Forman, cook for 2 minutes and then turn cooking for 2 more.

Enjoy with a side of carrot sticks–my favorite sandwich companion. :)

Yes, thank you! I calculated 2 PP for each pita. I would love to see how they compare to the Sara Lee/Mr. Pita brand I just found for the same NI. I love getting a huge pita for 2 PP (even though I know you aren’t calculating the new plan).
That sounds great and I always need new panini ideas. Just need the Mr to get on board with the pickles. :)
