Cheesy Salsa Tuna Burgers

Craving alert! Well, not really a typical pregnancy craving. It was more like a desire to eat a warm healthy lunch, kind of craving.

I don’t have much in the house in the way of fresh produce at the moment. I used all my spinach in the Turkey Spinach Lasagna Roll-ups, I don’t buy tomatoes off season (except for a pint or two of grape ones for snacking) and my CSA (the farm) season is over. :(

However, I did have one aging pepper and a few carrots sticks. I also have quite a full pantry and when I peered in–I saw tuna! I always forget about tuna. I’m just not a typical tuna salad kind of person. Although, I do have a couple of ideas in that department (Spicy Garden Tuna Salad and Garden Tuna Salad with Feta) I much rather the tuna burger I made up last month. So I decided to expand on the idea and add some different flavors–sort of out of necessity but more out of desire. I really wanted something warm!

The results was awesome! It was exactly what I needed for lunch. Something I could sink my teeth into. :) Next time I’ll be adding more hot sauce to give it even more of a kick! Cheesy Salsa Tuna Burgers

  • 1 7oz can of tuna packed in water drained as much as possible
  • 1 egg
  • 2 wedges of The Laughing Cow Light Creamy Swiss cheese
  • 1/4 cup of your favorite salsa
  • 3/4 cups old fashioned oats (60g) ground up in a blender or food processor
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried cumin
  • 1 tsp chili powder
  • 1 tsp dried cilantro
  • pinch of kosher salt and fresh ground black pepper
  • Dash of hot sauce to taste (optional)

Place all ingredients in a bowl…

…and combine with hands.

Heat a non-stick skillet over medium-high heat and spray with non-stick cooking spray.

Form the tuna mixture into 3-4 patties and place directly on hot skillet. Cook for about 3 minutes a side until browning and warmed thru and browned.

I served mine on a whole grain sandwich thin with a hunk of the aging green pepper (I need SOMETHING green on my burgers) and some salsa on top. And of course, I paired it with carrot sticks. :)

It made 3 nice size burgers. The nutritional info is only for the patty, not my bun or fixins. Oh and P.S. something I’m VERY nervous about is almost done…. click here for a sneak peak. :)

    These look and sound like they’d be delish! I’m normally a tuna salad gal, but I think I’ll try this for something new.

    I am super excited about your cookbook! You use ingredients that are common and usually in my pantry and you don’t try to make it complicated and fussy.

    Hi Roni, thought you might like to know that recent studies have concluded that pregnant women should NOT BE EATING ANY TUNA AT ALL, because of the mercury content. Check the web, the NY Times, etc.

    Love all your blogs and posts. BTW, re your snow angel caption, my adult children give me so much pleasure, I am so tickled with their accomplishments, humor, wisdom, health consciousness, etc—there are continuing new pleasures (as well as some trying times:-)—with children.

    Thanks for the advice Dotti but I rarely eat tuna. I’ve had 2 cans in the past 6 months. That is in now WAY, shape or form an excess amount. And according to the FDA pregnant woman should….

    * Eat up to 12 ounces a week of canned light tuna and other low-mercury fish, such as salmon, shrimp, catfish, pollock, and fish sticks.

    The amount of advice thrown around about what to eat and not eat is just insane. And for Pregnant women it’s can drive you MAD. I mean really.. batty. :)

    I’m not suppose to eat tuna, or runny eggs, or lunch meats, or soft cheese or raw sprouts, or (here’s a new one to me) papaya. I can go on and on.

    I’m going to keep doing what I’m doing which is eating a variety of healthy foods, while keeping active and enjoy the simple pleasures. It’s all I have to keep my sanity.

    All that being said.. I appreciate the link. I don’t plan on having anymore tuna in the near future as it isn’t something i eat a lot. :)

    I made this today and it was delicious! Do you reheat the leftovers in the microwave or on the stove, or would you eat them cold? I used shredded lowfat cheddar cheese instead of Laughing Cow (I didn’t have any). Thanks so much for the wonderful recipes. Your site makes healthy eating so much easier and more pleasureable.

    I have to say I was quite surprised with how well these turned out! Even my non-tuna eating husband said he couldn’t even taste that they were tuna. We LOVE the SW kick to them. We ate them for dinner along with some fresh sweet corn! Was an awesome meal! Thanks for the idea!

    Hello from the Texas coast! Just found your website today and tried this first. GIRL! You got this going on!!! I did add cajun seasoning and some chopped green onions and used steel cut oats cuz Dr. Oz recommends but holy moly! I could not believe how beautiful and delish these are! They were really loose but firmed up perfectly while cooking. I can’t wait to try something else from your site.

    Roni – I just love your site and become, well, sort of addicted to it ! I have made several recipes and I have been amazed and in love with every one that I have tried. And this one is NO exception.Love the kick of the salsa & hot sauce. The only difference I made was I did not have the Laughing Cow Swiss, but I used Laughing Cow Queso Fresco & Chipotle, which gave it a little more of a kick :) You have made me look at food in a whole new way with your great ideas. You make me realize that even if I do not have the exact ingredient that a recipe calls for, improvising is OK and and I am learning how to do that! Thank you so very much for your inspiration, sense of humor and your fantastic recipes. Every time I watch one of your videos, I think, I would love to meet her!
