Turkey, Leek and White Bean Stew


My initial idea to use the remaining leftover Thanksgiving turkey was a white chili, but then I realized I didn’t actually have any chilies, or peppers for that matter. So I’ll call this a “stew” instead. Whatever it is, it was GOOD! I knew I’d be the only one eating it so I decided to spice it up a bit. Topped with just a bit of colby/jack cheese and some fresh cilantro, it was a warm bowl of goodness on a cold rainy day. Turkey, Leek and White Bean Stew

  • 1 tsp olive oil
  • 3 leeks chopped
  • 2 cups of your favorite broth (I used stock made from the turkey!)
  • 8 oz of leftover turkey meat
  • 1 can of white (Northern) beans drained and rinsed
  • 2 tsp dried cumin
  • 1 tsp dried oregano
  • 1/2 tsp red pepper (less or more to taste)
  • 1/4 tsp ground cloves
  • 1/2 tbsp green chili sauce

Heat the oil and sauté the leeks until softened and just browning. Add the remaining ingredients and bring to a boil. Lower to a simmer and cook for at least 20 minutes, allowing all the flavors to merge and deepen.

Top with a bit of grated cheese and some fresh or dried cilantro.

I love 1 pot dishes! Pretty easy, no? :)

    Oh my gosh that looks so good. That is right up my alley! I just tried Northern Beans for the first time recently, and I love them! They are so soft and squishy (in a good way). Wish I had some leftover turkey to make this with. Love the fresh cilantro on top; that seals the deal for me.

    When you get chiles again, make my 2 point ancho chile soup – it was so good! I made a turkey breast a couple weeks before Thanksgiving since I knew we were doing ham on Thanksgiving – it was a great way to use up the leftover turkey! :D
