Tangerine Pecan Oatmeal

I woke up with a hankering for oatmeal again. Tis the season!

Honestly, I think I can do a whole blog devoted to just oatmeal toppings. It’s such a fabulous vessel to try out fun flavors. Today I took some Georgia Pecans (I won a bag on twitter!) and one of my favorite fruits of all time…

the tangerine! I love when those boxes appear in my local grocery store. I always ponder if I should get one as they look like so much. but without fail we polish off a box in a few weeks. They become a go-to snack, a lunch box addition, and today, a topping for a fabulous filling breakfast! Tangerine Pecan Oatmeal

  • 1/2 cup Old Fashioned Oats (40g)
  • 6 oz of water (I like my oatmeal thick, add more if you don’t)
  • pinch of salt
  • 1/4 tsp raspberry extract (vanilla or almond would work too)
  • 1 tangerine or mandarine orange, peeled and separated into sections
  • 5 chopped pecans
  • Drizzle of honey (~1/4 tbsp)

Put the oatmeal, water and salt in a small pot. Cook over medium heat until all the water is absorbed. Remove from heat and mix in the raspberry extract.

Put the cooked oatmeal a bowl and top with the tangerine, pecans and honey. You can’t get any easier than that!

    Oatmeal is turning out to be one of my favorite go-to meals. Keep the toppings ideas coming. This one looks yummy! I was thinking about making orange/cranberry oatmeal for dinner.

    My two sons can go through a box of those satsumas in a matter of 2-3 days. They also eat the tops-on organic carrots like there’s no tomorrow! Great idea with the oatmeal. I’ll have to pass this on to my oldest boy, the oatmeal fiend.

    I never would have thought to put oranges in oatmeal… I almost can’t stand the thought of “ruining” a beautiful clementine with some oatmeal. I’m going to have to think long and hard about this one! :-P

    :( I wanted to get a box of clemintine yesterday and Jon said no, because we had 4 fruit in the cart already, but they were giving out free samples of them and it was so tempting and tasty…. I should have bought them. Ive been doing oatmeal with a chai tea bag in the morning and adding in fruit toppings. Didn’t think to do it with nuts! candied pecans would be good with some chai tea

    I am always hesitant to pair fresh citrus fruit with… well, anything! Did you eat a piece of tangerine and then a bite of oatmeal, or would you combine both in one bite?!

    I actually combined it. It was a fun mix of textures!
