Simple Tomato and Feta Salad

Well, I did it. I really did it! I have to admit part of me didn’t think it was possible. When ATHENOS asked if I’d be willing be a Spokesblogger for their Make a Change for the Feta campaign. It included creating 18 Feta Cheese ideas for the month of July and I was a little nervous. With a family, a full time job and a vacation planned would it even be possible?

I made this simple salad the other night and it went perfectly on the side of leftover Spinach Feta burger along with some roasted fries and quick sugar snap peas. Perfect for the vine ripe tomatoes you may be getting from your garden or farm stand.
Here’s how I made it..
- About 6 small tomatoes quartered (Could use even more, this is just what I had)
- 1 tbsp balsamic vinegar
- 1/4 cup (34g) Crumbled Feta
- 1 tsp dried basil
- 2 heaping tsp dried parsley
- Black Pepper
Combine all ingredients and eat immediately or chill it. I ate half with dinner and brought the other half to work for lunch. It was simply wonderful both times.
No Nutritional Info on this one. Adjust the amount of tomatoes to meet your needs and just count the feta.. that’s what I’d do. ;)

My neighbor keeps bringing me sacks of cherry tomatoes…gotta keep finding new ways to fix them. Thanks for this recipe.
Ok. That’s it. I’m going out to buy feta cheese tomorrow. All these recipes are making me so hungry every night. I love feta cheese, but never knew I could do so much with it.

This is one of my summertime faves. With fresh garden tomatoes. Atheno’s has the best feta by far on the market. And I love the new larger size that is available.

Here’s a recipe I made yesterday….
marinated shrimp, red peppers, feta in dijon vinaigrette. Then made a grilled pizza and used it as a topping!
This recipe looks sooooooo goooood! Wow! I will do that tomato feta recipe! Also instead of burger, I’ll use veggie tomato basil morningstar farms burger top with feta, spinach, and dressing!

This sounds great. Tomatoes right now are so awesome. I went to Bonefish Grill for dinner and the side dish I ordered was very similar to this – I can’t wait to try it at home.
