    I have to go with orzo salad as well – but I make mine with balsamic vinegar, pinto beans, tons of basil and of course feta – the black pepper kind.

    It’s not a salad per se, but it could be put on a salad…I have been making wraps with garlic hummus, asparagus, cucumber, radish, sprouts and garlic and herb feta, they taste fabulous!

    I love a romaine/spinach combination with feta, black olives, grilled chicken, tomatoes and cucumber, with a little bit of lite honey mustard dressing. A GREAT light dinner in all of this heat!

    I LOVE feta with tomatoes, red onion, cucumber, balsamic vinegar and a little olive oil and some nice leafy greens. I sometimes add a few black olives, too.

    i love feta in my whatever u got salad:

    (usually)

    1 zuchinni small dice
    1 tomato small dice
    1/2 cup cooked quinoa
    chopped almonds
    evoo
    lemon juice
    some fresh parsely or mint
    feta

    room temp, or cold. add whatever us have in the garden :-)

    yum

    Romaine lettuce, grape tomatoes, seedless cucumber, vidalia onion, LOTS of black olives, feta and grilled shrimp with a red wine vinegar/canola oil and greek seasoning salad dressing. I could eat it every day! Oh wait… sometimes I do. Grilled chicken also works. :)

    Quinoa salad!!! Cold quinoa with bell peppers, cucumbers, olives, red onion, cilantro, lemon juice, and of course FETA!!!

    Romaine lettuce, kalamata olives, just a little homemade gyro meat, tomatoes, cucumbers, onions, vinegar/olive oil – FETA- and oven toasted pita bread as croutons.

    So cute, I love feta! My favorite lately is mixed greens, broccoli slaw, shredded carrot, cucumber, diced chicken breast, feta, and Gerard’s Light Champagne vinaigrette.

    Love feta in everything. My classic is romaine, spinach, red onion, carrots, zucchini and grilled chicken, sprinkle feta on top with balsamic vinegar and its always a hit around here. We also love to mix feta in our salsa and have our baked chips with it. Thanks for so many great ideas

    I made a cold pasta salad using my favorite pasta (generally a whole grain variety), whatever brand of Italian dressing is inthe fridge, tomatoes, cucumbers, crumbled feta, salt and pepper and some basil. Easy, inexpensive, feeds an army and so refreshing!

    The old standby, my dad’s greek salad:
    -sliced tomato
    -sliced cuke
    -handful of crumbled feta
    -oregano
    -mint (from the yard!)
    -salt and pep
    -a few drops (yeah, right) of olive oil
    -drenched in balsamic

    Yummy!

    I’m such a simple girl. I love grilled summer vegetables (zucchini, squash, tomatose, onions), cooled, then tossed with balsamic vinegar, pepper, and of course, FETA MAKES IT BETTTTA!;)

    My favorite way to use feta in a salad is with a mesclun blend, red onion, feta, dried cranberries, and simple olive oil and vinegar dressing.

    I’ve never had feta I don’t think. So I guess my idea would just be to try it out on a salad. I think it would probably be good with chicken on a salad.

    Greek Feta potato salad recipe.

    SALAD
    1 lb. red new potatoes, cooked and quartered
    1/2 cup sliced black olives
    4 oz. feta cheese
    One 14 oz. can artichoke hearts, drained and quartered
    DRESSING
    1/4 cup olive oil
    1 tbsp. lemon juice
    1 tsp. ground pepper
    1 tsp. chopped chives
    1 tsp. Dijon mustard
    1 clove garlic, minced
    Salt

    I just recently tried feta thanks to you and i am in love…so i experimented for this contest. the recipe im loving is:

    i shredded about two cups fresh cabbage (i love the crunch) some crumbled turkey bacon (if i dont include a meat the hubby wont touch it) 1/4 cup fresh peas (frozen will work) and liberally apply the delicious feta i also put some balsamic on some but found it just as tasty without it. very non guilty lite eats.

    likw i said feta is new to me i hope to try it again in future experiments.

    Romaine and spinach mix

    Small chopped:
    -cucumbers
    -red onions
    -kalamata olives
    -roasted peppers

    3 small lamb chops (grape seed oil, salt & pepper)
    lightly grilled or thrown in a stove top pan (I like medium for lamb) or get fancy and put some red wine/lemon juice in the pan too

    Lemon balasamic/red wine vinegarette (salt & pepper, grape seed oil or olive oil, lemon juice, a splash of red wine or balsamic vinegar)

    And of course, feta crumbled everywhere!!!

    I take a large portobella mushroom spray a little evoo, garlic powder, s&p. put a red onion slice, slice tomato, and top it off with Athenos feta cheese. Bake or grill for 15 min. YUM

    My favourite feta salad is lots of green, lots of crunch, and a little bit of sweet and tangy! Starting with mixed greens (baby spinach, romaine, arugula) with some fresh herbs, then adding cucumber, mixed bell peppers (they add such a beautiful colour!) and red onion, then topping the whole thing off with some fresh fruit (strawberries, raspberries or dried cranberries), chopped nuts, and lots of herb & garlic feta! The ultimate summer salad!

    Tastes so great I normally don’t even need dressing, but a simple EVOO/Balsamic dressing with a few dried Italian herbs goes perfectly with it! Yum!

    I like to add Feta to a very basic chick pea salad. Chick peas, chopped red onion, diced tomatoes, diced cucumber, Feta, salt, pepper, olive oil, balsamic vinegar. Mix, season to taste and let it sit in the fridge for a while.

    Another one of my favorites is a spin on the Capresee salad… fresh tomatoes diced, feta, drizzle of olive oil, and drizzle of basalmic vinegar…Different, but very tastey

    My favorite way to eat Feta cheese is to put it on chicken breasts with chopped red peppers, lemon juice and parsley and bake them. When the chicken breasts are cooked through, I put one on a bed of fresh salad greens and add a little salt and pepper, no salad dressing needed. Yummy!!!

    It might be boring but the classic Greek salad is probably still my favourite. I do like Feta on my spinach and strawberry salad as well. Honestly I just love feta :P

    My favorite thing to make with feta. Orzo, Feta Spinach salad

    Cook orzo according to directions. Drain and place in a bowl to cool. Chop of fresh spinach, toss it with the orzo, add feta cheese and a squeeze of fresh lemon juice and a little olive oil and salt and pepper. It can be served either cold or at room temperature. It’s so good!

    Quinoa toss with chickpeas and herbs:

    Cook 1 cup quinoa in 2 cups chicken or veggie broth.
    Combine 1 cup thawed frozen corn (or corn from 2 fresh ears), 1 can (15 oz.) rinsed and drained chickpeas, 1/2 cup crumbled feta, 1/4 cup finely chopped onion, 3T freshly snipped basil, 2 T freshly chopped flat leaf parsley and mix wit the quinoa.

    Whisk together 1/4 cup EVOO, 2 T fresh lemon juice, salt and pepper.
    Add to quinoa mixture, cover and let stand one hour or refrigerate up to 24 hours.

    Bring to room temp before serving. right before serving, stir in 1 cup diced, cooked beets. Serve in bowls lined with romaine lettuce.

    I like pasta salads with whole wheat shells; grilled chicken marinated in fig-infused white balsamic, olive oil, garlic, oregano, & thyme; zucchini ribbons; fresh oregano; feta; and maybe some fresh or dried figs and toasted slivered almonds. I serve this with a tzatziki made from greek yogurt, cucumber, lemon juice, & raosted garlice

    I have been eating homegrown cucumbers, bell pappers, and tomatoes toped with Athenos Feta cheese (crumbled) with a EVOO and balsamic vinegar the past week. This weekend, I am going to grill some shrimps and toss it with some fresh portobello mushrooms, spinach, & garlic and sprinkled with ATHENOS Feta cheese. Delicious! =D

    I like pasta salads with feta! My favorite is whole wheat pasta, sun dried tomatoes, artichoke hearts drizzled with a little olive oil, salt and pepper…all topped with FETA! yum!!

    Egg whites with canned spinach and feta, great lowfat and fillin recipe and minimal ww points!cook the egg whites seperately omlet style then heat the spinach and toss on feta..

    My favorite Pasta Salad
    1 lb tri color pasta
    1 english cucumber diced
    2 roma tomatoes seeded and diced
    1 cup pitted calamata olives
    1 1/2 cups feta crumbled
    1 small bottle of Christie’s greek dressing or any dressing you like
    cook pasta according to package, drain rinse under cold water. Add in cucumber tomatoe, feta & olives and mix the dressing in until everything is combined.

    oohhhhh…..well, since i have just been turned on to the wonderful world of feta, aside from eating a greek salad I think my favorite would have to be lettuce (spinach or whatever is on hand) with walnuts, dried fruit (again whatever i have…cranberries, raisins, etc..) feta of course and a homemade strawberry vinaigrette. If I have strawberries, I’ll slice them and throw them on too!

    I make a watermelon, cucumber,red onion and feta cheese salad. I use balsamic vinegar for a dressing or a light poppy seed dressing. Very refreshing

    Awesome Side Salad… Yeah, it has a name! :)

    2 cups of lettuce
    1/8 reduced-fat feta
    1 slice of onion, chopped
    2 slices of cucumber, chopped
    2 small radishes, chopped
    1/8 cup craisins
    1 Tbsp poppyseed dressing

    It’s fabulous!!! :)

    My favorite is a layered salad of romaine, cilantro, chicken (cooked stove top with chili powder), avocado, tomatoes, corn, green onions, pine nuts and feta. Add a dressing of olive oil, lime juice, chili powder and a pinch of salt. Yum!

    Noooo way. Love all of those goodies! Well here’s my “idea” – not sure how original it is but I know (first hand experience) that it tastes good!!

    shrimp taco salad!

    -baby greens
    -6 oz baby shrimp, sauteed with lime and garlic
    -handful of cherry tomatoes, halved
    -sauteed red onion, thinly sliced
    -corn tortillas, cut into strips
    -handful of crumbled feta
    -lime dressing of your choice!

    aaaamazing!

    Feta is good on everything. My favorite way to use feta is in my strawberry and spinach salad with sliced almonds, homemade poppy seed vinaigrette and feta on top.

    Crumbled Feta with Sun Dried Tomatoes and fresh Basil on Flat Bread. Drizzle a little olive oil on the bread add the above. Add some crushed garlic and pepper. plice in baking sheet or grill at 375 a couple of minutes! Yumm!

    I make a spinach salad with strawberries,toasted almonds, red onion, feta cheese and Newman’s Balsamic dressing.

    I’ll eat Feta in just about anything. My favorite is a feta veggie salad (no lettuce). Use a variety of tomatoes (grape, pear, cherry, etc), thick chunks of english cucumber, red onion, blanched asparagus and zucchini. Add in any veggies you like really. Toss with feta crumbles and your favorite dressing (I make a pesto vinagrette). I’ll also add some shrimp and make it a one-dish meal.

    Hi Roni! I just love reading your stuff!
    I’d say my favorite use of feta would be in a frittata -tons of veggies, one egg + 3 egg whites, crumbled feta and fresh basil on top – YUM! All that for only 7 pts. It’s a great dinner when I don’t want to eat pizza with the family – or good for brunch on a Sunday morning. And it works – I’m down 146 lbs on WW – I just achieved LIFETIME STATUS on June 27!

    Where I went to school in Ann Arbor, Michigan there was a place called Fleetwood Diner that was famous for its “Hippie Hash”. It’s hashbrowns cooked up with broccoli, tomatoes, onions, and other veggies and then topped with feta cheese. The addition of feta on top really makes it out of this world! My absolute favorite breakfast :)

    I usually just toss Romaine and tomatoes with a fast balsamic oil and mustard vinaigrette then sprinkle (or dump ;)) feta on top.
