Feta Cucumber, Tomato and Basil Sandwich

I made this up while home for the 4th of July Holiday weekend. I just wanted something quick and fresh using what I had on hand.

I’m not quite sure why I only made a half it was so good I ended up immediately making another. I didn’t think I’d like it so much but the balsamic soaked into the bread nicely and the crisp cucumbers and fresh basil were amazing with the feta. Feta Cucumber, Tomato and Basil Sandwich

Sometimes it’s the simple things, no? :)

  • 1 slice whole wheat bread
  • 1/2 oz feta cheese sliced thin
  • a few fresh basil leaves
  • 3 thin slices of cucumber
  • 1 cherry or grape tomato sliced thin
  • About 1 tsp balsamic vinegar

Cut the slice of bread in half and then layer the ingredients. Really, it’s that simple. It’s a sandwich! ;)

Since I made it a half I’ll give nutritional information for half but you could easily double. Or just make a half and pair it with a soup or salad. Totally yummy!

    “Sometimes it’s the simple things….” Yes, I was just thinking that when I saw the picture!

    I’ve only had crumbled feta, not sliced so I wondered how you were going to keep it on the sandwhich!

    Dana – You could always give it a quick grill with the crumbles to help them stay!

    that looks good, but it wouldn’t keep me full. maybe as little ‘tea’ sandwhiches at a party?

    ohhh FUN idea! But that’s why I made two or said to pair it with soup/salad. It’s just a snack. :)

    I make a tomato, cucumber, &crumbled feta salad. Just drizzle w/ a tiny bit of olive oil and a drop of balsamic, a salt. So Good

    to Dana, you could buy a block of Feta at the deli counter of most grocery stores. It is usually where the olives and potato salad etc are.

    Got me thinking so I went in the fridge. I used whole grain bread, skinny cow cheese, bottled roasted green peppers, spinach leaves, basil from the garden and basalmic vinegar. What a great, low cal way to add taste an moisture. Great idea Roni.
