Chilled Orzo and Pea Salad

I’m not feeling too well so I’m going to keep the banter short tonight but I had to share this quick side dish I whipped up tonight.

Here’s the story… We picked up a cooked rotisserie chicken and I wanted a quick side. This is what I came up with mostly because I didn’t want to make a separate veggie and starch. Shockingly BOTH the husband and the little guy LOVED it. I got unsolicited compliments and they totally cleaned their plates. I don’t dare call it “creamy” although that was my intention but it didn’t matter, the flavor from the one wedge of cheese was a great pair with the pasta and peas. Prepare the pasta according to the package. Remove from heat, quickly drain and return to pot. Add the laughing cow cheese wedge and garlic powder. Stir continuously until the cheese completely dissolves. You may want to squish it now and then.

Once the cheese is melted add the frozen peas and stir until they defrost. The dish is meant to be served at room temp or slightly chilled, like a salad.

    This looks and sounds absolutely awesome! We had a rotisserie chicken from the grocery store the other night, too and it was nice to have a night off from cooking, yet still eat something healthful. I hope you are feeling better when you wake up in the morning. =)

    Add me to the list of people trying it. I don’t have Orzo, but do you think that whole wheat couscous (garlic flavored) might be good with the peas and a little laughing cow cheese wedge too? I just bought some at the store and already have the cheese.

    I don’t even know really what couscous is, but felt like being adventurous.

    Roni, how I love thee…let me count the ways!! LOL. I think I actually have all this stuff all in my house right now and I am gonna whip it up… just like you! You make me want to just dance around my kitchen and throw stuff into a pot and voila! Dinner is served. Funny thing: those are always the BEST dinners aren’t they? You are an inspiration to just “do it”…thank you!

      I think it’s about a half a cup but I always weigh everything in grams instead of using measuring cups. Do you have a kitchen scale?
