Simple Fried Rice with Kale

Another kale idea for you. This week I do a semi-quick video while making dinner. Did they like it? Did they eat the kale? Well I’ll tell you, the husband enjoyed it but you’ll have to watch the video to hear the 4 year old’s take. ;~P

    Regarding kale and soup: last weekend I made a potato soup (no recipe - just through some ingredients together from a couple different soup recipes I've used before) and added kale to it. I really liked it. I like the Zuppa Tuscano soup at Olive Garden and recently learned it has kale in it, so that was my inspiration to what I made. Where did you find that big bag of kale? Reply

    Your fried rice looks good. I finally searched what kale is called in Finnish and I'll have to see if I can find it. You mentioned that once you have the oven on you like to use it as much as possible. I don't know if you like granola, but here is a Lazy Granola recipe that bakes the granola overnight. I reduced the oil, brown sugar and honey last time and it was still good. Reply

    Those big bags of kale were on sale at our local supermarket for $0.99 apiece last week so we bought two! Lucky us, although there were still big pieces of the stalks inside that we had to pick out. I added it to my turkey lentil soup yesterday and it was great!     love it! :) great idea chopping the kale up - i think that trick will work on my 28 year old husband just like it did on ryan ;) two quick random questions (apparently I'm fixated on "skin" today...)! 1 - i always keep an onion in the fridge for the week like you do as well - but i always peel the entire skin off after the first time i use it. does it keep better if you keep the skin on, or is that just a personal preference thing? :) 2 - when you freeze the ginger - do you peel the leather skin off first? or do you freeze it like that and just grate it with the skin on? :) Thanks!     It should, it worked on my 34 year old one. ;) As for the onion, I have always just left on. Not sure if it helps. And I used to peel the ginger but now I just wash and freeze. Call me lazy but when you grate you can't tell the difference. Hope that helps! Reply

    We use kale all the time -- particularly in winter. Simplest. Steam it and douse it in balsamic vinegar. We like it!!! Reply

    Speaking of kale....I made the Salmon & Asian Kale for one for lunch today. It was sinfully wonderful. I didn't use the wasabi, just fresh ground pepper on the salmon, but the aroma of the sesame oil and fresh ginger was mouth-watering and since I love soy sauce, that was the icing on the cake. (I am allergic to all shellfish, peanuts, treenuts and oils so I haven't had Chinese food since 1992. Therefore your kale fried rice will also be made very soon.) Reply

    Hi! Thanks so much for this recipe! For myself, I use BRAGG's Liquid Aminos as an alternative soy sauce. Love it! Really, I'm not pushing any sort of advertisement, though I am Asian so I use a ton of soy sauce in my everyday meals (okay not a ton, gotta lower that sodium intake :D) but this has a ton less sodium and I honestly think it has a better flavor.     I tried it and I thought it was quite yummy. My husband, who thinks that iceberg lettuce is one of the greatest foods ever, thought the kale was too strong flavored and picked it all out. Oh well, guess I'll be eating the rest of the kale on my own. Reply

    Regarding Kale. Kale is very high in antioxidents, and fights cancer. It is one of the top greens you can eat as it has so rich in many different vitiams. We eat it at least once a week. I buy it fresh from Publics (FL) or in the bag. The fresh to me is the best. Bag is the easiest. I do not cut mine into small pieces when I purchase it fresh. Just take the leaves and break of the end of the stalk and wash good and throw in boiling water,onion & vinager mixture. It is not bitter at all. I have been eating it since I was a child and that been a long time. I cook kale with a little water, onions, garlic salt, garlic grandular, and onion granular and any other spices you would like, and then I pour in some vinager, I cook it until it has boiled down some. (You can add a little sugar if you want) I stir it up and serve it as a veggie with our meal. It is very tasty. I even have my grandchildren asking for it when the come to visit me. The love it. My 2 year old great grandson loves it as well. Reply
