Wasabi Salmon with Asian Kale for One

I whipped this up the other day when I was working from home and then again today for lunch. It literally takes 15 minutes and it’s so flavorful and nutritious! Nutrition Data gives it 5 our of 5 stars for Optimal Health (I love it when that happens!) and says the recipe is a good source of Dietary Fiber, Protein, Niacin, Vitamin B6, Vitamin B12, Magnesium, Potassium, Manganese and Selenium, and a very good source of Vitamin A, Vitamin C and Vitamin K. That great but all I know is it tastes YUMMY! :)

The recipe is for 1 serving but you can easily double, triple or whatever for your situation. As you can see I made it only for me. Between the kid hating fish (I think it’s a texture thing) and the husband not into the greens, I didn’t even bother presenting this as a family dinner. Although I hope to maybe one day get them there. In the meantime I’ll hide the kale in family favorites like stuffed peppers. ;)Wasabi Salmon with Asian Kale for One

Here’s what I did.

  • 1 tsp (5g) sesame oil
  • 1 thick slice of a sweet onion chopped
  • 1 clove garlic minced
  • 1 cup kale cleaned and ripped into chunks
  • about 1/2 inch chunk of fresh ginger root (can replace with about 1/4 tsp ground ginger)
  • 1 tbsp low sodium soy sauce
  • 1/4 cup water
  • about 1 tbsp wasabi powder
  • 1 4 oz salmon fillet

Heat the sesame oil in a nonstick skillet over medium high heat. Sauté the onion and garlic until just turning brown. Add the kale right on top and grate the ginger root on top of the kale. Add the 1/4 of water and tsp of soy sauce. Mix everything together and cover. Keep an eye on it as soon as the water looks like it all evaporated (about 1-2 minutes) remove the kale from the skillet. If you like your kale more cooked more simple add additional water and cover until desired doneness is reached. Then remove.

Spray the same skillet with a bit of non-stick spray and return to the medium-high. Sprinkle both sides of the salmon fillet with the wasabi powder and place in the hot skillet. This is what my wasabi powder looked like. . .

Cook about 2-3 minutes a side depending on the thickness of your fillet. A good indicator of when to flip in the whiteness you’ll see on the edge. Shown in the picture.

Once the salmon is done, place on top of the kale and viola! Wasabi Salmon with Asian Kale for One! :)

    Looks so inviting. I think it may have to make it for myself as well. The family isn't that into fish...yet.. I am trying to figure out where the bulk of the calories are from...hmmm... is it the soy sauce? Reply

    BigTickles - I'm glad you said something. It didn't look right to me either but when I rechecked after your comment I realized I had 200g of wasabi not 2. LOL 5 Points is more like it. :) Reply

    I LOVE salmon. It's my favorite fish and it actually helps a lot of things. They even recommend it for my mom because she had a stroke and it helps with brain development/functionality. Yay for eating more salmon. I make it for myself with carrots and broccoli as a regular lunch a lot. Yours looks great. Does the kale taste good cooked? Not bitter? Reply

    I made this just last night for my hubby and I for dinner. Although I could not find the wasabi powder, it was great! I used a simple salt, pepper and garlic powder combo on the fish. I happen to love kale...it is great sauteed with garlic, onion and a little dry red wine. Thanks for all the video posts, by the way. It makes this whole blog thing more personal...kinda like I'm learning from a friend! Reply

    The combination of salmon and kale sounds delicious. I've recently been introduced to kale and I love it! This recipe sounds similar to one I concocted a few weeks ago where I ground up about 1/4 C. of wasabi peas along with a Wasa cracker in the food processor and used that for the crunchy coating on some tilapia. I'm going to pick up some wasabi powder next time I go shopping! Reply

    I didn't have kale, salmon or Wasabi powder but I tried a variation with Mustard Greens. I added canned diced tomatoes and cayenne pepper. It was very tasty. Thanks for the recipe. Love your blogs. -Mark Reply
