"Lighter" Stuffed Shells and My Party Spread

This week I decided to record a bit as I prepared for my first party in the new house. I made the husbands favorite, Stuffed Shells. As I say in the video, I’m not going to give nutritional information or specifics but I shared my “lighter” technique as well as my tips for entertaining slightly lighter.

If you guys are interested, I’ll work on a more traditional recipe for this when I’m not preoccupied with hosting. I’ll make a single batch and calculate approximate nutritional info. You’ll just have to give me a few weeks. :)

    LOL - you are too cute - love your explanation of the fruit bowl! :) Have fun at the POM Harvest - it sounds like a fabulous trip! (and I'm just a TINY bit jealous all of my favorite bloggers get to go while I'm stuck in cold Cleveland!) Question - would you consider doing a video of that fabulous sounding garlic bread paste? You did an excellent job describing it - but I'm totally a visual learner so I'd love a video how-to! If not - no biggie! :)

    I loved this post! Was cracking up over the meatballs and am glad you got to overhear your husband bragging about them. That's so funny! It's barely 10 am here and now we are craving stuffed shells. They look really yummy. Enjoy the POM thing!

    Oh yeah, what kind of counter tops do you have? I was wondering because you set that hot pot of sauce on there. They're beautiful, whatever they are. Love your kitchen.

    I absolutely HAVE to make those shells! I've sort of wanted to for years but thought they might be too much trouble. Looks like I've been wrong for a long time. You made it look so simple, and as soon as I do another grocery run, I'll get shells and ricotta. I already have everything else because I keep it on hand for my nearly fat free lasagna. I'll use either the bulk Italian sausage I have in the freezer, or the meat balls. I have the no-sugar-added sauce that I doctor up so that should make enough for the two of us, and I'm a big proponent of freezing leftovers or making two smaller dishes and freezing one before cooking. Helps on those days when the arthritis pain is too bad to stand for any length of time. I can hardly wait to do this! Thanks for all your hard work getting to this point, and for all the effort in letting the rest of us know how you do such marvelous stuff. My daughter said you're great, and she's right.

    Krista - just realized I forgot to answer... I have the cheapo counters. One day I hope to upgrade but for now they are the traditional kind, I can't remember what they are called right now. lol

    Hi Roni, Totally crazy question here, but we just built our house this summer too and I did my kitchen in green, yellow and orange and I was wondering where you got your dish towels? I really like them and though maybe it would be a store that is in my area too???? Thanks... sorry to bug you, but they are cute! Sara

    Hi Roni! I've been cooking your wonderful recipes all day! I made your homemade sauce, turkey meatballs and stuffed shells. Everything was delicious! This was my first time making sauce from scratch. I usually open a bottle of Ragu ~ so this was different for me. I love it! Not sure if I'll be able to go back to Ragu now!! Thank you!!

    Roni, you are amazing!! I loved your stuffed shell recipe video and I'm going to try making it sometime soon! I especially love the part where you explained that the meatballs were made of half turkey and half beef. Sounds like something I would do! LOL! Thank you! Lucinda
