Apple-Cinnamon Pancakes

Let me first say this idea only hit me because of our recent influx of fruit. :) I had a slow morning as the little guy had a doctors appointment. So I got to chill a bit instead of rushing in to beat traffic.

So I took the idea behind my quick banana pancakes and gave apple a try. I was pleasantly surprised how they came out. Really Moist and fluffy! But honestly, I wish they tasted a bit more “apple-y” (is that a word?) Next time I may add another apple and double the cinnamon but overall this should give you a good starting point for your own experiments.

I do have to add the toddler, DARN IT, I mean THE KID, really liked them. We dipped in apple sauce and had a blast knocking off the whole batch which is really perfect for 2. :) Apple-Cinnamon Pancakes

  • 1 apple (I used a granny smith) grated
  • 1 egg
  • ½ cup (4oz) skim milk (or soy or almond)
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¾ cup (90g) whole wheat flour

Grate the apple, skin and all. It’s slow to start but just keep at it and you’ll get grated apple mush. :) Add the egg and milk. Whisk.

In a smaller bowl, add the flour, baking soda, baking powder and cinnamon. Sift into the apple mixture. Mix until just blended.

Heat a skillet over medium heat. Spray with non-stick cooking spray. Using about 1/4 cup of batter form pancakes. Cook about 1-2 minutes a side, small bubbles will form but not as many as traditional pancakes. I just peak underneath for a light brown color, then flip.

    Looks delicious! :) (Although I have to admit mine would probably end up in a little maple syrup bath!) Did you just use grated apple to use up the fruit or does it have some advantage over applesauce in the recipe itself? Also, for those of us who aren’t lucky enough to have an adorable dining companion, do you think the leftovers would keep in the fridge for breakfast the following day?

    Laura – There’s no reason why you couldn’t use applesauce. Or even pumpkin for that matter! :)

    These will keep in fridge OR you can freeze them. I do it all the time with all my homemade pancakes. Just pop a frozen one in the microwave for a 20-30 seconds and viola!

    I’ve been making the toddlers your banana pancakes (with mini chocolate chips) and they love love love them. It’s so great to be able to give them something with whole grain flour in the morning!

    Well, today tragedy struck when we realized that we were out of pancakes in the freezer AND out of bananas! This will surely save the day tomorrow morning.

    Really love your banana pancakes and the whole grain ones too! We’ve tried all sorts of variations but never apple. I wonder if you could use apple juice or cider to make them more apple-y? Maybe a half milk/half juice combo or something? Or maybe dry milk and juice. That would add calories I guess…just pondering.

    I just made these and they are FANTASTIC! I used just over 1/4cup applesauce, and one thinly sliced apple in the mix and it turned out really, really good. One of my new favourite recipes.

    I made the pancakes with a small container of applesauce, 1/2 tsp cinnamon, 1/4 tsp nutmeg, and 1 tsp vanilla. They weren’t very apple-y, but they were delicious!

    Made these with grated Gala apples (used 2 small apples) because that’s what I had. I upped the cinnamon as suggested and added 1/2 tsp of vanilla and 1/4 tsp kosher salt. They came out sooooooo good!!! Approved by my 21 month old! :-)

    Hey! I made these pancakes tonight and they were delicious. I ended up just chopping the apple into teeny pieces cause I was winning the battle with the grater ;) Thanks for the recipe. I loved them! :)

    I just started perusing your website and love it. I made these for my kids this morning, a snowy day in breakfast. Of course, I didn’t look at the photos and saw that you grated the apple, so I threw my 2 pink ladies in the food processor with the grater and I ended up with something that looked like latkes. The kids LOVED them. Though, my 4 year old said, “I like these, but I don’t really like these. They are yummy but I think it needs some syrup” hahaha…So, I put just a little agave on top of them and they were gobbled up. Thanks for the great recipes. So glad to see things that aren’t ladened with sugar!

    Sounds delicious! However, I have a question. The ingredients list calls for cinnamon but the directions say nutmeg? And the “banana mixture” is referring to the apple mixture right?

    Usually I make the pancake recipe you have with the oatmeal in it. Today I tried these and added some chopped walnuts and a little nutmeg. YUMMY! Topped it off with sugar-free maple flavored syrup.

    I love your pancake, waffle recipes. I just pick one and add what I have , today I made the grandkids mango with cinnamon and pecans and they were awesome.Then I made a batch of blueberry ones, they were eating them just like a cookie. The rest are in the freezer and won’t last long. you have the best recipes, I recommend your site to everyone. They helped me lose 40 lbs in Weight Watchers. Keep up the good work Roni.
