Blueberry Muffins

I’ve been wanting to experiment with a blueberry muffin for FOREVER! I’m not sure this one is complete quite yet. I may tweak it slightly but I’m satisfied with the results and so was the toddler. He ate two! Even the husband took a bite and said they were good. Although he’d never eat a whole muffin. He’s just not a muffin man. :)

You”ll notice sprinkles in some of the pictures. Sad the say the only way I can get the toddler excited about baking with me is to promise a sprinkle session. He still has fun and participates through the whole process…

…but he’s just doing it for the sprinkle pay off. Apparently hanging out with mom in the kitchen just isn’t as cool as it once was. :( Blueberry Muffins

  • 1 and ¼ cups (150g) of whole wheat white flour (regular whole wheat works too)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 heaping tsp cinnamon
  • 1/4 tsp of salt
  • 2 egg whites
  • 1 large overripe banana
  • ½ cup plain non-fat yogurt
  • 2 tbsp honey (42g)
  • ¼ cup applesauce
  • 1/2 tsp almond extract
  • 1 cup blueberries (148g)

Preheat the oven to 375 degrees

Mix the whole wheat flour, baking soda, baking powder, salt and cinnamon. Set aside

In a medium bowl mash the banana with a fork. Add the egg whites, yogurt, honey, applesauce and extract. Whisk until well blended and a bit “frothy”.

Mix the sifted flour with the banana egg mixture and the blueberries until just moistened. Don’t over mix!

Spray a 6 muffin pan with non-stick cooking spray.

Evenly distribute the batter in the muffin tin cups. Sprinkle with ground cinnamon (or sprinkles!) Bake for about 25 minutes.

    Haha…the muffin man reminded me of the song too!! I just started singing it in my head. The muffins look DE-LICIOUS!! I may have to try them this weekend.

    I think the sprinkles are the best part of those muffins, aside from the blueberries! Thank you so much for posting this.. i’ve been looking for a healthy-no oil-blueberry muffin for a while now! I’ll be trying this out this weekend!!!

    These look good and only 3pts. That’s a whole lot better than the 9 pts for the reduced fat bb muffins from DD. I’ve been eating them but just looked up the nutritional info and I was amazed. I do have to admit I’m a littel leary of making muffins. I made bb muffins from the Hungry girl cookbook and they were not good. I’m sure it was me and not the recipe. I’ll let you know if I decide to make them. As always, thanks for everything!!!

    I wonder if you could alter your banana oatmeal w/ choco chips recipe and do blueberries? I am going to try it out but I will try this one too minus the banana and try blue berry yogurt and some extra honey. I have eaten too many bananas in the past week.
    This is really good if you have some extra bananas that are ripe/over ripe/not ripe at all.
    Leave it intact with the peel, take off stickers if there are any and then just take a nice sharp knife and slice the top but just to the bottom peel not all the way through. Gently pull open like its a boat and fill with peanut butter and chocolate chips. Roll it up in tin foil and back in 350 degrees for 20 minutes. take it out and purt a scoop of ice cream if you want in it. You can probably take this and run with a great idea. Like almond butter and apple slices with cinnamon in it and a yummy frozen yogurt or something

    I think learning to have stuff with less sugar is awesome–way too dependent on it. I love the texture of them, and Alton Brown would tell you that if you want sweet muffins make a cupcake!

    mmm! I just finished devouring one of these! DELISH!
    I also added 1/2c fresh frozen cranberries, and I used fresh frozen wild blueberries! They are super yummy! and one ginormous muffin for a total pointsplus value of 4!!

    These look delicious but your comment about them not being sweet makes me want to add sugar to them. Im not a big honey person, instead of honey could I put sugar? How much would you say?? (I don’t use artifical sweetners).

    Is this a ‘jumbo’ muffin pan? These look teriffic! I want to try them subbing in some oatmeal and wheat bran for a bit of the flour. Really craving muffins lately. Muffins and pancakes! The only problem is these things seem to make me really hungry within only about half an hour after eating them! But they are soo good, and are helpful when I need more calories (because they are quite calorie dense).
