		<description>I love homemade homefries much more than most diners' versions. I cube mine and then steam them in a steam basket for 3-4 mins. They cook much faster and get a lot crustier. Just make sure you drain/dry them well or they get mushy when they hit the oil (maybe from the steam?).

		<description>I do this with any leftover baked potatoes I have (sometimes on the weekends I make extras, just to fry them up for breakfast the next day!) Just slice or cube, and they don't take long at all.   I always add paprika too, and makes them a lovely golden color.</description>
