This recipe is a total "keeper". I frequently make it in a 8x8 (or 9x9) pan and cut it into squares. Most helpful tip is to make sure it really cools before cutting/serving. As you mentioned with the muffins, they're still tasty, but the texture is MUCH improved if it's not all steamy and mushy inside. We probably make this 2-3 times /month consistently - I buy bananas for the sole purpose of letting them go south to make this recipe. Super nom with some vanilla or honey Greek yogurt. Thanks!

These muffins have a nice texture. I have made similar recipes that turn out so hard you can barely bite into them! I will say that you must like the taste of bananas in order to enjoy these. I might try using applesauce next time.

It all depends on how sweet you want them. With ripe bananas I rarely add sweetener and I use unsweetened almond all the time now. You can always just toss in a few more chocolate chips. That's how my kids like them. :)

Made these tonight in my mini muffin tins (44 minis) and used these new parchment paper muffin liners I found. They're awesome!! No sticking! I calculated them to be 1 point+ per muffin for the minis. Another great recipe, thanks!
