Instant Vanilla Pudding Cups with Banana and Sprinkles

Not my most extravagant idea but it was sure fast, lite and tasty. Not to mention the toddler was in love! Before I get into the idea I have a confession to make. I never tried vanilla pudding until I made this. That’s right. I’m 32 years old and never had vanilla pudding. Why? Well as my mom likes to say "I was stubborn." Apparently when I was a kid if it wasn’t chocolate I wouldn’t eat it. Pudding, ice cream, cake, whatever. It didn’t matter. By age 3, I was already a choc-o-holic. So I just grew up just thinking I didn’t like vanilla and this lasted well into my 20s!

Ok, so I am stubborn. I admit it. But I can also admit when I’m wrong. Vanilla is AWESOME!

Anyway, the toddler insisted we make vanilla pudding and as soon as I tried it I knew I MUST pair it with banana. The sprinkles were the toddlers addition. :) (I was also thinking a crumbled graham crackers would be a nice topping too!) Instant Vanilla Pudding Cups with Banana and Sprinkles

I’m totally making these for my next play date! :)

  • 1 package Sugar Free Instant Vanilla Pudding
  • 2 cups cold skim milk (I actually use about 1 and 3/4 cups for a thicker base)
  • 1 banana sliced
  • 1 tbsp colored sprinkles

Make the pudding according to package with the skim milk.

Pour into four individual cups and let sit for 5 minutes. Top with banana slices and sprinkles.

EAT! :)

    I added a teaspoon of vanilla pudding mix to my steel cut oatmeal before I put it in the microwave this morning. It was awesome!! Just a hint of flavor and sweetness with virtually no added calories!

    That looks super yummy. And so simple. Maybe some sugar free caramel drizzled on top to really send it over the edge into dreamland. :P

    Here in KY, banana pudding is very popular. It seems really common to me, but maybe you’re just now discovering it. It ranges from instant with cool whip to my fave (unhealthy) recipe of nilla wafers, bananas, and homemade from scratch vanilla pudding all layered with a meringue on top. We definitely enjoy the lightened, faster version made into parfaits. And we’ve just discovered that a little sprinkles on yogurt makes it taste extra special!

    like you, i am a total chocoholic…i don’t think i refused vanilla as a kid, but i just went for chocolate. now, as an adult, i’m finding that sometimes, i like vanilla better!!! shhh…don’t tell the cocoa beans that! :)

    when i went through my yogurt for b’fast phase, i’d take non-fat plain yogurt, sprinkle in some of the non-fat instant vanilla pudding mix or the non-fat instant white chocolate pudding mix (to sweeten it up), and add strawberries & bananas! YUM!!!!!

    When my boys were little, they wanted “sminkles” on everything. Now that they are 10 & 13, they still ask for “sminkles” on their hot chocolate and pudding. I think it makes it taste better. =)

    My kids have been on a vanilla pudding kick for an after school treat! I layer it with graham crackers, choc chips walnuts or whatever I have. I too was never a vanilla fan until my thirties… Then I got a choc chip cookie recipe that had a pouch of vanilla pudding in it and it makes all the difference.

    I tried it with chocolate pudding, banana and sprinkles (because I was out of vanilla) and it was delicious!
