Pork Chops with Simple Mushroom Gravy

Oh My WORD! I am SO happy with the way this meal came out. Inspired by a mushroom craving (mom is nodding her head in disbelief as I used to LOATHE mushrooms) I defrosted some boneless pork chops and and went to town. Honesty, I didn’t exactly know what I was going to do. I just started chopping, searing and mashing.

The husband looked remotely interested because I told him we’d be having mashed potatoes. As long as there’s mashed potatoes, gravy and some kind of meat he’s happy. So I knew he’d like this and he did. The toddler did too! Although I skipped the mushrooms on his plate. Glad I did, he ate everything else. :)Pork Chops with Simple Mushroom Gravy

  • 4 boneless pork loin chops about 4 oz each
  • 1/2 sweet onion diced
  • 10 oz package of mushrooms sliced
  • 3 cloves of garlic minced
  • 1 tbsp apple cider vinegar or applesauce
  • 1 cup of your favorite broth (chicken, beef, vegetable)
  • 1 tbsp worcestershire sauce
  • 1 tbsp whole wheat flour
  • non-stick cooking spray
  • Kosher Salt & Pepper

Lay the pork chops on a sheet of saran wrap. Top with another sheet and bang away! You want to thin the pork out to 1/4 -1/2 inch. Similar to the way we did it for the Naked Chicken Parm Idea (click to see pictures.)

Heat a large skillet over medium-high heat and spray with non-stick spray. Season both sides of the pork with a bit of a Kosher Salt and Pepper. Once the pan is hot add the chop. Don’t crowd the pan, do them in batches if you have to. Flip after 2-3 minutes and cook for another 2-3 minutes.

Remove the pork from the skillet and set aside.

Lower the heat to medium and spray the skillet with a bit more spray and add the onion. Stir and add the mushrooms and garlic. Let them cook down a bit, maybe a minute or two. Add the apple cider vinegar. Stir.

While the mushrooms are cooking, whisk the broth, worcestershire sauce and flour. Add to the pan, bring to a boil. Put the chops back in, cover and simmer for 5-10 minutes until ready to serve.

As I said I served mine with my own creamy mash potatoes, which honestly was perfect but you could do noodles or even brown rice I suppose. So for the nutritional info I’ll stick with just the pork, you can add what you decide to pair it with.

    looks so yummy! Pork chops make me think of my mom........she always made the best! I will try these....mine never turn out right. Hubby thinks they must be fried in grease.....yuck........Alabama boy! Reply

    Mushrooms and pork go really well together! My father always cooked his pork chops with a can of cream of mushroom as sauce. My recipe is very similar to yours, to cut back on the fat and calories from my dad's version, and you can use it easily in the slow cooker too. Sometimes I add apple slices directly in the pan with the mushrooms too, for a sweet and sour version (though your hubby might not appreciate this one). If you like mushrooms try adding a variety of them. I love to use chopped Portebello mushroom instead of the white mushrooms. They add a lot of texture and taste. You can also try Shitake mushrooms if you want more flavour. I bough dried Shitake in bulk and man do they pack a punch! Not as easy to use though since I have to reconstitute them in water for an hour, but you can find fresh shitakes too. Reply

    I made this, Roni....and it was good. But I have a question....what is the purpose for the apple cider vinegar? Is it to deglaze the pan from the onions and mushrooms? Could I use water instead, because I wasn't crazy about the vinegar taste, and I really love vinegar, but just not in this. I think it took away from the mushroom flavor, as I couldn't really taste the mushrooms, and I love mushrooms, but all I could taste was the vinegar. Sorry...I don't mean to pick at your recipe, because all your recipes are wonderful! Reply

    Bonnie - Pick away! I post ideas, and sometimes those ideas need some tweaking. I used the vinegar for a bit of apple flavor and I added it early to actually cook away some of the vinegar taste. If you don't like it skip it! It would totally work without it! Or how about a bit of applesauce?!? Experiment... have fun! Reply

    I made this last night, & it came out fantastic! I did make a change though, we were out of apple cider vinegar, but we did have an open bottle of red wine. So I added some of that instead. It was more than a Tbs. This dish was enjoyed by both of my daughters, my husband & myself! Thanks for another great recipe I will be adding this to my regular rotation. Reply

    I made this tonight and it was amazing! I seasoned the pork with pepper,garlic salt, onion powder, and montreal seasoning to give it a little pep. I'm not a huge fan of pork so I wanted to do something different with it. I made this meal with egg noodles and cheddar broccoli and it went over real well! Roni- I am a big fan of your site! Your recipes are wonderful and always made with ingredients that I have on hand which is always helpful :) Reply

    Made this the other night and it was a hit with both kids and adults! I deglazed the pan with about 3 T. of white wine and used the apple sauce variation instead of the vinegar. Served it with the suggested mashed potatoes. This is definitely a keeper! Reply

    Hi Roni! I discovered your website yesterday and made this last night along with the mashed potatoes. I thought it was fantastic!!!! I love finding recipes that are light, easy to make, and taste great. Thanks for all the wonderful ideas. My boyfriend is very picky like your hubby. He said he's not really a fan of pork and commented that it was "alright." I noticed his plate was clean though! ;) Reply

    Glad you liked it. As for the points. I go by the complete nutritional info after calculating a total and then dividing it by the number of servings. 175 cals, 3 g of fat and 2 g of fiber comes out to be 3.4 points. Feel free to round up if you are concerned. Another way to calculate it is to just go buy the meat which I would count as 4 and everything else is free. Both work.. that one point off is not going to kill you. Calculate the best you can and stick with the system that works for you. Reply
