Pom Berry Sauce

I love having a houseful of people willing to be experimented on! My in-laws were in town this weekend and unlike the husband they appreciate my food ideas. :) This was the second experiment I tried out on them, I’ll post the other one later this week.

The first idea is a simple sauce. The great people over at POM sent me a case of Pomegranate Juice. I was totally psyched as I LOVE pomegranates and totally miss them when there are out of season. The juice, albeit not the same, is a great way to get that pom fix. Today I used just a bit to make a simple sauce for my pancakes. You can totally use it on anything, really. I’m thinking a little Breyer’s Free with this topping with be summer go to. :~)Pom Berry Sauce

  • 1/4 cup (2 oz) of 100% pomegranate juice
  • 1 tbsp low sugar strawberry jelly
  • 1/4 cup blueberries
  • 1/2 tbsp whole wheat flour

Put all ingredients in a small pot and whisk over medium high heat. Bring to a boil. The sauce will thicken. Lower to a simmer until ready to use. If the sauce becomes too thick whisk in a splash of water.

The nutritional info is a bit tough as the amount will vary based on how much water you add an how thick you like it. I was able to get at least 4 tbsp so I’ll base it on that.

    I added just a little more sweet to this and it was delicious on our weekend 1-point pancakes. And now I’m thinking of other juices/jams to use . . .Thanks!!

    I have been making a berry “sauce” for over my special k waffles adn I knew I could make it “saucier” mine was simple cause I am in no way a genius like you lol I just used a scopp of frozen mixed berries and a little water in the pot over heat heat at first until it melted then I simmer it until I am ready to use it….simple I know and it wasn’t too much of a sauce more like a mushy berry mess but it tasted good and is filling….anyways what I am tryign to say is thanks for showing us how it make it “saucier” lol

    just an update! I make this like every morning over my waffles and it’s so good! I also dip my turkey bacon in it….weird I know but I love sweet and salty
