Ask Roni – Stick-less Turkey Burgers?

http://greenlitebites.com/2008/08/09/ask-roni-stick-less-turkey-burgers/

Hi there, I tried your turkey burgers. I love the flavor. I cooked mine is a le creuset grille pan but they totally stuck to the pan and I generously added olive oil to coat the pan. Any tips on cooking these so so they don’t fall apart?? Thanks

-Beth

Hi Beth! I was going to answer you privately but then I realized others may also be having the same problem. Sticking is something very common when working with ground turkey and these burgers are no exception.

Here’s a few things that I do to keep in mind…

  1. I use non-stick cooking spray when cooking on a skillet or on the grill. Surprisingly enough, I cook them a lot on the George Foreman and never had a problem sticking even without spray.
  2. I form the patty and plop on the grill immediately. The recipe really makes a loose patty that doesn’t hold it’s shape for very long unless cooked.
  3. Once it’s on the grill/pan (over medium-high heat) I do not touch it for at least 4-5 minutes. By that time there should be a good crust on the side that’s down that will hold it together and prevent sticking.

That’s it, really. Let me know if any of those tips help. If you are still having problems you could add another egg white to help hold them together a bit better. That’s really the “glue”.

Hope that helps! Thanks for your question!

laughing as initially I thought Id MISSED a recipe for turkey burgers ON A STICK!

I add a splash of eggbeaters to the recipe you use to help mine stick.

I’ve only cooked mine under the broiler or on the grill, and I always put them on foil sprayed with cooking spray. They never seem to stick that way!

I made a version of these for my family and also found them to be a little sticky – below are some tweaks I made and it has worked!

    1. Replace 1/4 cup oats with 1/4 cup bread crumbs to make the mixture hold better (I make my bread crumbs from arnolds wheat bread and store in the freezer).

    2. After making the patties I stick them in the fridge for about 30 minutes before grilling.

    3. I cook these on a charcoal grill or on a non stick pan on the stove- spray the grate or stove pan with some cooking spray before you begin cooking.

    Hope this helps!

    Barbara,

I’m so sorry you are having problems. Some of my older videos use a different video provider and there service is having problems (one of the reasons I no longer use them.) Give it another try and let me know if you are still having problems. If so, copy and paste the url (address) of the page with the video and I’ll take a look.

    Sorry again,
    Roni
