Blueberry-Mango “Crisp”

Thank Dani for this one! I saw her luscious looking Mango-Ginger-Blueberry Crisp and raided my kitchen to duplicate. I say duplicate but what I really mean is experiment. Those that know me know it is IMPOSSIBLE for me to follow a recipe. Really, it may be my fatal flaw.

So I used what I had and tried to lighten it up a bit. I’m totally happy with the result but I’m not sure a purest would call it a “crisp”. Let’s just say its a sweet fruity individual dessert with a topping?? Whatever, I liked it!

  • 1 cup fresh blueberries washed (148g)
  • 1 mango cubed (see video on mango cutting technique)
  • 2 tbsp honey separated (21g each)
  • 1 tbsp whole wheat flour
  • 1 tbsp lemon juice
  • ½ tsp nutmeg separated
  • ¾ tsp cinnamon separated
  • 1/8 cup quick oats (10g)
  • 1/8 cup bran (8g)
  • 1/8 cup grape-nuts cereal (14g)
  • 1 tsp olive oil (5g)

Preheat the oven to 375 degrees

In a medium bowl combine the blueberries, mango, 1 tbsp honey, flour, lemon juice, ¼ tsp nutmeg, and ¼ tsp cinnamon. Set aside.

In a small bowl, combine the quick oats, bran, grape-nuts, oil, ½ tsp cinnamon, ¼ tsp nutmeg and remaining tbsp of honey. Work with a spoon until topping comes together.

Equally distribute the blueberry-mango mixture into 4 individual custard or tart pans. Top with the cereal mixture and bake for about 20 minutes. Serve with a dollop of vanilla yogurt or fat free whipped topping!

Note: I’m glad I’m posting this the next day. The grape-nuts, although crispy when hot out of the oven did not hold their crispness the next day. Don’t get me wrong, still good! just not crispy.

    I assume that’s meant to be a quarter teaspoon of cinnamon, not a quarter cup? :) These look so good. I’m always on the lookout for desserts that taste great and don’t use butter or refined sugar.

    Longtime viewer, first time commentor. I have had a canary melon. It’s been awhile but if memory serves me correct, I thought it to be a bit like a pear/honeydew-ish taste…if that makes any sense!
    Also congrats on your running. I too have started running within the past year. Just ran a local 10K for the second year and shaved 9 minutes off my time. It’s amazing how addicting it can be!

    Looks really good. I may try it with peaches as those are in season. I also have some frozen mango from Aldi’s. Do you know how many grams of mango you used? I might try it with the frozen. I love the individual servings. As far as the crispyness goes I don’t think anything is going to keep the crispyness after being refrigerated for a day or so. You know the condensation thing. As always thanks.

    I made this last night and it was good.My husband even ate one and liked it! However, I halfed the amt of nutmeg because I am not a big nutmeg fan and the taste was still a little too strong for me-may use even less next time. I also made your sesame chicken and broccoli recipe and it was the real star last night!My sixteen yr old son loved it and he never likes anything I cook.I also made a batch with chicken and bell peppers in place of the broccoli for husband who hates broccoli and he loved it!

    I made this yesterday Roni (using blueberries & peaches, because I had left four that weren’t getting eaten fast enough) and it was fabulous! I kind of doubled and baked it in a 9×9 to feed us all (6) and it was a hit! Yummy. Now hubbie doesn’t like anything that doesn’t have a pound of butter and/or chocolate so that is QUITE an accomplishment for you Roni!

    This recipe was fabulous!! Very pretty - next time I’ll make a huge batch. I did put it all in a small baking dish rather than individual bowls and that worked fine.

    The video on how to cut a mango was very helpful. I didn’t end up with a ton of mush. :)

    Made this last night - it is awesome. I accidentally made it w/ 2 mangoes, but oh well. The ice cream is necessary - love the hot/cold thing. My husband enjoyed it too. I might have to switch it up a little this fall and use cranberries & apples. Oooo- pears!

    I have tried a couple of variations of this recipe over the last 2 weeks with rave reviews from the hubby and kids! First was with apples instead of the mango and blueberry, the second was with strawberries and rhubarb, for this one i left out the nutmeg and lemon juice and added 2 tbsps of brown sugar as the rhubarb is a little tart. Thanks for this recipe Roni this is so versatile, just pick a fruit and add the crumble topping!
