Leftover Cheese’steak’ Pita

I made this for lunch yesterday and then again today. I almost wish I had more leftovers for tomorrow!

Here’s the idea, a little leftover lean protein, a ton of veggies, a slice of cheese and a whole wheat pita. Really, how can you go wrong?Leftover Cheese'steak' Pita

  • thick slice of sweet onion diced
  • ½ of a small zucchini diced
  • ¼ of a red bell pepper diced
  • ¼ of a green bell pepper diced
  • 2 oz of cooked chicken or turkey breast or any lean cut of meat
  • 1 slice (1oz) Muenster Cheese
  • ½ large whole wheat pita or 1 small whole wheat pita
  • Koshers salt & pepper
  • non stick cooking spray

Spray a small non-stick skillet with non-stick cooking spray and place over medium-high heat. Add the onion and let cooke while dicing the other veggies. Add the zucchini and peppers, sprinkle with a bit of salt and pepper. Cook until just turning tender. Stir in the meat and cook for a minute to warm it up.

Push everything in the skillet close together and lay the cheese on top. Cover for a minute to allow cheese to melt.

Scoop into the pits using a spatula. Server with a side of baby carrots!

    This recipe sounds great.I have pitas. I have veggies. All I need is some protein, and I’m good to go. :D

    This looks delicious. I think I’ll give it a go for lunch today with some hummus and chickpeas or butter beans for vegetarian protein. I actually just baked pita bread, for the first time ever, yesterday, using this recipe and 100% wholemeal flour and they turned out fantastic! Puffed and everything, heh. And with no additives or preservatives, bonus!

    Inspired by your recipe, I stuffed some chicken, onion and zucchini that I’d grilled on the Foreman grill into a pita with some tomato and RF provolone cheese. I threw the whole thing on the grill for a few minutes to melt the cheese and then drizzled it with 1 tsp. EVOO and a splash of balsamic vinegar.

    Yum!

    Hi Roni! If you’re interested, look for Joseph’s Low Carb Pita. It’s 1pt and superyummy and has flax and other healthy stuff in it. I found them in front of the deli counter at WalMart.

    OMG that is so funny! I totally have done this recipe for about a week now and this is the first time I have seen this recipe lol The other day hubby cooked up some steak and I was thinking what i could do with my portion and I knew I wanted some veggies so I chopped up zucchini spinach peppers and onions and cooked that up….orignally I was thinking a wrap but while going to grab the tortillas I saw the pitas and I was like “oh yeah” and I also tossed my veggies with a little ranch just 1 tablespoon (1 point) and put it all in the pita I loved it so much I keep doing it like every other day with whatever meat I have (which has only been steak or chicken) I feel like there is light at the end of the tunnel if I could think that up before I saw you do it and the fact that you are my cooking muse I feel like I may be able to cook myself up a decent meal here and there! Thanks for being here for us! You are an inspiration!
