This recipe looks great! I love kabobs but hate waiting for my charcol grill to warm up. 

My new go-to dinner idea when I all I have is chicken and veggies is fajitas! When I was cooking them I kept thinking of you becauase they were so easy to cook and so healthy--something you both include in all your cooking. It really is the simpliest recipe every--cook slices of chicken breast (liberaly covered in fajita seasoning) and then add in sliced pepper and onions. Cook till tender and then eat in a tortilla with FF sourcream and FF cheese for a quick and healty meal.
