This is so funny -- I actually make something almost exactly like this regularly.  My mom used to make it for me as a child because I do not like actual casseroles, but it was the "insides" of it which is fine.

The only thing I do differently may help with your "thick" issue (when you mentioned using more water).  I make the chicken the same way you do (with garlic and onions).  I drain the pasta at that point.  I then put the soup and a splash of skim milk (I realize a "splash" is not that helpful of a measurement -- it's probably about 2 tablespoons) back into the pot, add the noodles, then the peas, then the chicken.</description>
