Hey Roni!

This is so funny -- I actually make something almost exactly like this regularly. My mom used to make it for me as a child because I do not like actual casseroles, but it was the "insides" of it which is fine.

The only thing I do differently may help with your "thick" issue (when you mentioned using more water). I make the chicken the same way you do (with garlic and onions). I drain the pasta at that point. I then put the soup and a splash of skim milk (I realize a "splash" is not that helpful of a measurement -- it's probably about 2 tablespoons) back into the pot, add the noodles, then the peas, then the chicken.

Kathy - I use mostly use 8th continent light (http://www.8thcontinent.com/Products/ProductIndividual.aspx?CategoryID=2&ProductID=6)
It only has 2 more grams of sugar then regular skim milk and I actually dilute it with cows milk to stretch it further as I find it sweet.

Hope that helps!

Hi Roni,

Despite not being a toddler, I share the toddlers love of chocolate milk. You have mentioned it in a few videos including this one. I was wondering how and what brand chocolate milk you use? Most seem filled with sugar. Thanks!

Excellent job making lemonade out of lemons! I LOVE frozen peas too! My husband won't eat peas, but I'm guessing he grew up on the canned variety. I might have to sneak some in our next dish!

Thanks for the great ideas - ALWAYS!!!

Roni! I'm sorry I've been commenting like crazy lately. And I just realized there is another Allison who comments, so I'm going to be 'Allison K' now :P

Anyway! I love these 'one pot' pasta dish ideas. They are super comforting. I'm normally more inclined to use wilted leafy greens.. but tonight I'm using frozen peas in your Beef-a-Roni dish! I am SO looking forward to it!

Thanks, yet again, for another genius idea! :D
